Have you ever seen egg prices at $1 per egg range, or $12/doz? Hold on a few months and perhaps you will. That is the context for the scale of food price increases the USDA is now starting to predict. The highest predicted change in food costs in well over 40 years, that’s the USDA warning in their revised May “Food Price Outlook”. [DATA HERE]
This month the USDA just re-re-revised the forward price outlook, and things are grim. It likely doesn’t come as a surprise to many CTH readers because we have been discussing the convergence of events since October of 2021, when we first were able to predict Wave-1 (Dec/Jan), and Wave-2 (March/Apr) inflation. However, the underlying data for Wave-3 is double the prior two phases.
Keep in mind the data is national & skewed toward low estimations as represented by (+).
When the USDA predicts egg prices increasing by 19.5 to 20.5% (from where those prices are now), there will be regions with much higher retail increases than estimated.
Just two months ago, USDA had egg inflation at 2.5%-3.5% range, year over year. Again, that’s the scale of change; from a 3.5% forward outlook to a 20.5% forward outlook effective right now.
Food at home (grocery store) prices: up 7% to 8% in this monthly review, versus the April outlook of a rise of 5% to 6%. That means the USDA is predicting the highest grocery store price rise since 1980 when prices rose 8.1% (prices rose 7.2% in 1981). There is no reason to think the USDA forecast will not rise again in June.

If you have not taken food price stability seriously before now, please take proactive measures to secure your family. We are talking about future retail food prices that were simply unfathomable last year.
You know how much prices at the supermarket have increased in the last six months. Double that, and there’s your estimation for food prices later this fall.
Behind all the datasets, statistics, BEA, BLS, USDA and analysis of these things, there are real people living paycheck-to-paycheck that are likely to be in serious food insecurity position for the first time in their lives.
I’m not talking about poor people, I’m talking about solid upper middle-class working families with kids who are already being hit hard by gasoline, energy, housing and grocery store increases. Another twenty percent increase in food costs can easily become a crisis.
The core issue is this snowball of production costs inside the field to fork supply chain. Diesel prices, fertilizer prices, energy prices, seed and feed prices, all of it has doubled and tripled in less than a year.
Add in transportation and distribution costs that have doubled, and all of that cumulative impact is going to flow through the food supply chain from the field to the processor (wholesaler), and into the supermarket. Fresh foods, especially in the produce section, will catch many people off guard.
Not all news associated with this is bad news. As you read this you have information that allows you to take control and be proactive. YOU will not be part of the national population that is stunned in September and October. YOU know what is coming. With that in mind, do what you can today, tomorrow, this week, to be proactive and offset the impact. Taking action reduces stress.
Perhaps shop proactively for your holiday shelf stable food items now. Look at the circulars and on-line for coupons, not for then – but for use now. Perhaps learn to make some of the foods you would normally purchase already prepared. Small proactive seeds, kept in mind while carrying on day-to-day life.
I know from reading comments that many of you have planted ‘victory gardens’ this year. Those harvests are worth 50% more now they were three months ago. That’s the way to look at it. Every amount of saving matters…. and yes, grandma carefully washed the aluminum foil and reused it for a reason.
“A depression is repeated after most people living thru the last one has passed on”. My grandparents said that more than a few times back in the 50’s and 60’s. Their children, my parents, have now passed, as has all but a few of their generation.
From their stories of the times of the depression, then as now; evil and communism was rampant through certain populations, government workers and bankers were highly privileged and arrogant, their crimes covered so well it took a world war, 20 years and incredible sacrifices to overcome the damages.
We’re walking right into the repeat of history! If you have living relatives of the depression; talk to them; they have stories that just might save your life and family. Learn from them!

I learned the practical lessons of the Depression from family friends. Their grandfather bought a small island off the coast of South Carolina in 1936 for $50 because a friend couldn’t pay taxes. The Depression in the 1930s was the result of tight money policies and the gold standard. The New Deal juiced the economy for a short amount of time, but then it all crashed down again in 1937. WW2 started in 1941 for Americans (but Lend Lease etc was a couple of years before that). Hence, the faulty judgment that WW2 (or a war) can get us out of Recession/Depression. That is the “broken window” economics fallacy which ignores all opportunity costs….

Actually eggs are still a ‘cheap protein’ but you’ve been conditioned to buying eggs at bargain pricing.
One egg provides a bit more than 6 grams of protein. At $3.99/dozen, one egg is 33-cents. So, having 2 eggs at 66-cents for a 12 gram serving of protein is still much less expensive than any meat or fish yielding 12 grams of protein.
We don’t buy eggs, we have a flock of layer hens…but I still watch the price of eggs as an indicator of food inflation.
I don’t love eggs, but when they were cheap scrambled eggs for dinner for my crowd was cheap and quick. Quiche was nicer, a little more work, time and expense.

Our local grocery store had many 1 1/2 dozen eggs for $1.99 yesterday in the “day old” section.
Although they won’t be good if the power goes out, I’ve taken to individually freezing eggs in order to have them later on.
I’ve also been buying fresh eggs with the bloom still on to water glass in order to have fresh eggs — without refrigeration — for up to a year.

That’s how I grew up. Never knew there was a name for it. I had 8 siblings (11 in the family) so everything was scratch cooking. We had what was called a fruitroom. Every summer and fall was canning time. All fruits and veggies. We bought our eggs at the produce store and bought eggs by the case (each level was 3 doz eggs with 4 layers). The eggs were stored in the fruitroom. My mother had frugal buying down to an art.

What is the date of the reset and how will that impact the inflation rate reported by BLS? And wheat products will get more expensive as supplies run out. Global wheat supplies will be gone in just 8-9 weeks, about the time for the northern hemisphere new crop is being harvested. However, weather issues, increase cost in inputs [fuel, seed etc] and lack of fertilizer is going to create a smaller than normal crop. In the PNW continual rain storms has delayed planting of some fields. Looks like about 20% of fields will not get seeded this year. Hearing the same in Canada & Dakotas. Heat in the midwest is negatively effecting their crops as well. So, I do not see our food situation improving within the next year. If anything it is going to get worse. Stock up as you can!

Bought eggs yesterday, 18 count for $4.49, a pound block of butter is up another dollar at $4.19 and a gallon of 1% milk is $4.99. Milk is priced by fat content so whole milk is well over five bucks a gallon. I’m in Northern Mississippi. I shop at Price Cutters.
Butter can be frozen when you find a good sale. We are eating $1.50 a pound butter, from the freezer
I can’t stock everything for years, but I’m doing my best to cushion what is happening / coming.
I have eaten butter that I left in it’s original package and then wrapped in 2 zip lock freezer bags and froze, that was 2 years old and still very yummy.
Costco has some great deals on butter.
You could also free up freezer space by making ghee out of butter or pressure canning it. Ghee is very simple to make and only takes about 15 to 20 minutes and you don’t have to use any fancy expensive butter. Pressure canned butter is good for at least 5 years when processed correctly and stored in a cool dark place. There are numerous YouTube videos available that teach both processes.
Butter is actually easy to make. Just buy heavy whipping cream and put it in a food processor with a little salt. Whiz for 4-5 minutes, pour out the buttermilk, whiz 3-5 min more and you have it. (save your buttermilk – i put it in ice cube trays and freeze it for when i need it) Wash out the buttermilk from the butter so it keeps longer. Then separate it out into sections and freeze it. There are a lot of things you can make at home with just a few ingredients, instead of buying them already processed.
I am making butter this weekend.
But…I am using Mason Jar with 2 marbles in it.
And then shaking it. Figured that will give me a good arm work out!
I will do the food processor…but going to do the jar first…
I told my sister to have her grand kids do it. Will keep them busy…and will be educational.
In Kindergarten our teacher taught us how to make it.
She poured the ingredients into a container and we sat in a circle and passed it around, each kid taking a turn shaking it like crazy.
It worked! And it didn’t even take that long!
We ate it on saltines as soon as it thickened up.

Chickens are pretty easy. A hen or two and you are in business. You can feed them scraps/leftovers.
They are pretty easy to care for. Lots of info on YouTube. Just remember that everything likes to eat chicken. Keep them safe from four footed and winged predators.
Make cuts now, both to get used to different foods (or amounts of expensive ingredients) and so you free up cash to fill your freezer and pantry.
Also watch waste and use every scrap of food you buy. Whole chickens are still cheap here and I make chicken stock with the bones.
I actually really like the taste of broccoli stalks.
So after I cut off the top part to store in the fridge for eating, I cut off the rough sides of the stalk, chunk it into long strips and dice those.
Then I steam ’em for 1 minute in a rice cooker and freeze ’em to and to tomato sauce later.
It’s pretty fun to think of new uses for things you used to throw away.
I bet they’d be good in a stir fry- kind of a crunch like water chestnuts.

Back when I was in Taiwan and China, Taiwan (the wealthier country) used more meats/poultry/fish in their stir fries.
China (poor) used less meat, more veggies in the same dish.

I posted a few weeks ago that everybody should purposefully starve themselves now. It is much easier to do when you know you can go eat! Get your caloric intake down. I have been working on doing more with less.

Agree. Do more with less. Avoid throwing out leftover food by preparing less and eating any leftover foods within the next 2 days. Plan meals ahead and know what foods you have on hand and what needs to be restocked. Build up a pantry and keep it fresh. I always look at expiration dates on food when buying it, checking for the longest shelf life.
After making stock or bone broth, most chicken bones with exception of the leg bones are generally very soft at that point, so after straining the broth you could save the bones, dry them, pulverize them and use the resulting bone meal as a garden supplement for your plants. Same with egg shells – dry them, pulverize them and you have calcium additive for your garden plants.
Another item to think about is canning jar lids, fruit pectin, and canning jars which are available now and may not be at harvest time.
Tractor Supply has reasonable prices on jars. Not so at Bezos’ site…..thru the roof. Also good to stock up on lids and bands when you can find good prices.
Also look into reusable lids like Tattlers.

HUGE barrel full of ’em in the store. Full of vinegar and eggs (peeled IIRC). People would just reach in w/ their bare hands and grab ’em. Self serve.
I’m thinking they lasted forever. Older generation loved ’em, parents, grandparents.

Long ago people would Water Glass eggs, and that is becoming popular again.
Put fresh, unwashed eggs (with the bloom still on them) in a large jar or bucket, and pour a mixture of Pickling Lime and water over to cover the eggs. Put the jar or bucket in a cool dark place and the eggs can last up to two years — unrefrigerated — and still be used as though fresh once needed.
Hens lay lots of eggs in the summer and production slows down in winter. By Water Glassing eggs old timey farmers used to store their extra eggs all summer, and enjoy them all winter.
I have never heard of this. Interesting. I’d love to try this but unfortunately I do not have a dark cool place to store.

I used to frequent an old hotel / bar in Herkimer, New York run by an elderly couple and Millie always had a jar of pickled eggs and Horseradish pickles behind the bar. That’s where I learned too make pickled eggs. White vinegar and a bay leaf is all there is too it.

Another one to be familiar with is chicken of the woods very very very easy to identify and literally any thing you do with chicken you can to do the mushroom from frying to soup.
Can be found in abundance. 50 100 lbs in one outing..

Morels, dryads, ramps, watercress in the spring. Chanterelles next month and Sheepshead mushrooms in sept/oct. There’s more, lots more. Mushrooms are health promoting and dehydrate and rehydrate easily and keep for a long, long time.
Be careful of watercress! only take from running water sources
The most expensive items will be things that you need to ‘just add water’ to like canned soups and boxed mixes. They are also a poor nutritional choice. Buy the basic ingredients and learn how to cook… everyone can cook a decent meal of some sort and it will be more nutritious and tastier than the prepackaged stuff. Save vegetable scraps and bones in bags and freeze until you have enough for a base for soup or stew. I never saw the Waltons eating canned soup!
My parents taught all their kids how to cook, change a flat and other life skills. I did the same for my kids.
The only canned soup in my home is Campbell’s tomato, which I stock up on when it’s cheap. I make tomato soup from my home grow tomatoes and it’s better, but not the same!
I can’t change a flat because they put the lugs on with air wrenches!

I’m surprised that grocery stores still have specials and sales. My community only has a Food Lion. You have to travel 35-40 miles to find another grocery store. There are a lot of the Dollar stores around.
Food Lion often has very good sales. But I usually buy only sale items there. Over a few weeks I can end up with a nicely varied pantry by shopping their sales. Your comment reminded me to check their circular for this week…..thanks!

Our dollar store here in northern CA is now the buck and a quarter store.
Try the Dollar Generals..they have good sales and a section with one dollar items..I stopped shopping at the Dollar Tree when their prices went to 1.25..

Usually Friday afternoons along the north shore of Lake Superior you’ll find very heavy bottleneck traffic heading further north along Highway 61. And usually on the Friday afternoon of Memorial Day Weekend the traffic is heavier than that.
But yesterday afternoon I stood outside a struggling tourist business talking to the owner and we were both stunned by how empty the highway was.

So I guess, growing the chicken flock, planting a 1/4 acre garden, and getting a milk cow who just calved was a good thing. My liberal family members who still live in the belly of the beast thought I was nuts to jump into farm life. My conservative family members think I’m brilliant. All I know is, this has been a ton of hard work and I’m exhausted, but my family will eat. I thank the Lord for this opportunity.
I asked my grandpa what they did during the Great Depression, and while he hated farm life having grown up in it, he said, “We all went back to the farms”. There are hardly any family farms left, so I started one last year. I’m not bragging at all. I saw the handwriting on the wall and responded to it the best I could. Again, I am grateful for the opportunity.

I was given a Gardyn for Christmas last year. I thought it was stupid expensive but it was a gift so…
It’s now 5 months later and I calculate that I have saved almost $280 so far on salad greens, tomatoes, peppers, cucumbers with it, and it’s organic if you use the right fertilizer. This thing will almost pay for itself by year end. I was so impressed I bought a second one to grow herbs and more. No weeding, maybe an hour a week of maintenance and harvesting.
This is not an advertisement, it is just a comment what is possible in a very small space. There are a number of manufacturers of these things, they are well worth checking out IMO
I have 3 3’ grow bags of potatoes outside, citrus trees, am about to plant a few avocado trees and some bananas, and 2 3’ grow bags of vegetables. I haven’t bought but about $100 of fresh produce over the last month.
It’s a blessing. I don’t know how I’d control my grocery bill otherwise.
Now if only I could generate my own electricity…
You’re definitely on the right track. Upgrade your hydroponics to aquaponics and raise fish as an additional food source (The fish waste will provide nutrients to your plants).
Raise meat rabbits. They procreate like crazy and when raised in a rabbit tractor which allows them to graze on grass, they are a very cheap food source. Use their manure in a biodigester to provide you with cooking gas and sell the “rabbbit tea” for garden fertilizer (The manure can also be used to build a worm bed to feed your fish).
Buy jumbo coturnix quail and an incubator to provide yourself a cheap and space efficient poultry and egg source.
If you can buy raw milk from a farm make your own butter and farmers cheese. Both are easy to make.
Heirloom seeds will be like gold so if you can raise heirloom plants save the seeds for barter.
Last but not least, build a simple wood gas generator to use for electricity. Good Luck!
I remember a depression era phrase that my grandmother used a few times, “use it up, wear it out, make it do, or do without”. Knowing that history repeats itself this is a mindset that will return.
Other food resources to use would be your local Farmer’s Market’s and search your area for local Farm Co-op’s / CSA’s. Get to know these people and you can have a pretty steady source of Produce, Eggs and usually some type of Protein (chicken, beef, pork).
I know a lot of people who have started Canning, Dehydrating and/or Freeze-Drying food preparing for potential food shortages. Hopefully it does not happen, but at the moment all signs are pointing in the SHTF direction.
Farmers market prices are about double the prices of mid price supermarkets
My N California county is a mix of suburbs and produce ranches The farms all have fruit stands. Same prices as the supermarkets in town. And gas is very expensive now days.
Everyone ready to get chickens just remember that they can survive without grain. The egg production goes down but you can’t afford grain anyway. Eggs can last up to six months in the fridge if you don’t wash them and keep the pointed end up.
Folks need to start thinking outside the box.
For example, if you burn firewood cut enough for several years now. Split enough for one to save your energy. Gas, chains, files, saw mix, and everything that goes into it such as fuel to haul it home might not be available in the future.
Things used once a year now because lives have always been easy may be a handy tool. I use a whetstone maybe once a year because razor blades are so cheap and plentiful. In another year the hardware store down the road might be out of business.
My dad was a kid, grade school. He tells of taking a baked sweet potato to school for lunch. I asked what else, well that was it he says. If lucky I had 2.
My mother younger only remembers W.W.2 There are good lessons there too.
Rationing and shortages. My mom once burst out at a Sunday dinner table pointing at the dish next to rolls, is that real butter!!. My grandmother had brought out the good stuff since the preacher was a guest. Her favorite treat. Heresy chocolate bar, given only at very special occasions by her dad who worked at the T &P shop. One thing that is very different now. WW 2 brought some relief in the form of jobs. We can’t get many to even work today. “Hard Times”. Thats what my grandma always said when speaking of depression, then WW2. I am afraid we are in for some hard times.

I am fearful about the election-do they know they can still win it? Without Congress, Big Guy is sidelined from getting any more done. Have NO Household budget.
Live “check to check”; whether its a “paycheck” or SS.
Will be in SERIOUS danger of financial devastation (homeless, carless, etc.) w/in 1 month of ‘losing’ that monthly income.
Such people are burying their head in the sand; HOW can they KNOW if they “can afford” any purchase, be it a new, flat screen T.V., or a dozen eggs, if they haven’t a household budget?
Step one; take 3 months, and record EVERY expence, putting them into categories; Transportation, to include ALL costs, including maintenance and repairs, Insurance, fuel, etc.
Food, including everything like spices.
Housing; again include everything you spend $ on, that keeps a roof over your head; this includes utilities, water, etc. and yes, some for maintenance/repairs.
Internet, phone and entertainment.
Then, the “easy part”, having tracked your “outgo”, compare it to your income, and therein lies the rub, and why so many avoid having a household budget.
A great many will find their outgo regularly exceefs their income.
They are effectively “bankrupt”; certainly in a deep hole. They manage this, month after month, year after year, thru using CREDIT, and “robbing Peter to pay Paul” (and incurring a LOT of STRESS) all in order to “do what everyone else does” and “keep up with the Joneses”.
25 years ago, my household weaned ourselves off credit, took 3 months to develop a household budget, and live within our means.
Then, in each category we looked for ways to invest a little $, one time, in order to permanently LOWER our monthly expences going forward.
So, we gained a permanent “savings” and could then invest THAT “savings” in another area where we would yield a permanent reduction in our monthly ‘nut’.
We now have around $1000, every month that is truly discretionary; after ALL our monthly expences are “covered”, we have this $ to invest in one time expences, that will further reduce our monthly expences going forward.
Everything we own, WE own.
And this with an income that the Federal govt considers at right at the “poverty level”. I KNOW there are those with considerably higher incomes, that have NO $ “left over” at the end of the month.
And, the reduction in stress?,…PRICELESS!
As food prices increase, so will the number of people who will simply fill their cart and then walk out the front door of the grocery store without paying for anything. The heavy-duty thieves are still after big-ticket items, such as Tide and beef and beer and wine. They sell the Tide for “half-price” and they consume the others. But people will do just about anything before letting their families go hungry, and stealing from the evil local grocery store is easy. So part of your higher grocery prices are you, the honest citizen, paying for the stolen items. Kind of like an extra tax, a robbery tax. The thieves don’t pay that tax.
The destruction of the middle class and lower class by the democrats is in full gear. Just a part of the effort to make this a third world country so that we are easier to control. The worldwide elites and many wealthy Americans, as well as most democrats, fully support this agenda.

Regrettably, Stu, when “reality happens,” as you describe it, you’ll have to endure all those annoying and infuriating questions from all those “acquaintances” on the issue of ‘how all troubles came to be.’
You sound like a patient man; however, the challenging part–for you, and all of us– will be remaining calm, cool and civil in polite company when you (we) offer your (our) obligatory explanations concerning what should have been obvious had people not buried their heads so stupidly in the sand.
I suppose an even more challenging moment (and this where I DO tend to lose my cool!) is at that point when there are insistent, and annoying follow-up questions or comments from these polite acquaintances that reveal such shallow understanding and slavish adherence to leftwing news sources that no explanation could ever adequately address in 2 minutes.
In the end, our future success and happiness as a society will demand of all of us a level of bravery that is capable of accepting that our current world, much to our chagrin, IS WHAT IT IS. Once past this hurdle, emotional turmoil dissipates and frees the mind to think and to act more resolutely (without fear or dread), knowing that life is finite, and that happy lives are built on doing what one believes in one’s heart is in the path of light, goodness and truth for all.
When reality happens, those who did not prepare will be gunning for those who have. Literally and figuratively. It’s gonna get damn ugly out there folks.

My husband is very prepper minded and I am as well (but not quite as much as he is). Despite this, It certainly is a challenge when I feel like we’re living in between “normal” and the verge of a catastrophic famine😳. There doesn’t appear to be a famine yet….why should I worry and use all my extra spending money on food for the pantry???? I have to admit, it’s challenging as a couple to agree on how to “invest” our hard earned money when everyone around us is going on fancy vacations and enjoying getting their hair and nails done🤪. And I’m buying extra cans of vegetables, oatmeal, rice, chicken, toilet paper……to make sure we don’t run out for our large household if 8! I can see how the average woman would not be interested in worrying about stocking the pantry when she’d rather get her hair done or buy the cute summer outfit she’s been eyeing. After all….I the stuff at the store has always been there. How could it possibly change? Normalcy bias. I don’t know your situation but I encourage you to lovingly share with her your desire to provide and concern to care for your family. My husband and I read a lot of the same articles and discuss. We are on the same page, however, it is still painful to buy ahead when you’ve never had a reason to! Perhaps share some articles with her of different sources pointing to food shortages? Or refer back to the great toilet paper shortage and explain your desire to make sure she is well cared for and loved! Hardly a woman can argue with her man for wanting to make sure she is well cared for and loved/provided for! Having extra of what you already use won’t hurt you but she sure will thank you if she needs it!!!! She may protest now but maybe ask her how she would feel if she couldn’t get what your family needs at the store or had to wait days/weeks/months for it? Baby food shortage is a prime example. Wish you well in that!

And as for those who take the fancy vacations now and have brand new cars (neither of which are edible to my knowledge anyway) you will be keeping your family fed. Now, have you thought of a way to secure it? If you haven’t already, train and purchase at least 1 firearm and be willing to use it. Never leave your house unattended. Think of raising chickens for eggs and for slaughter when they are too old to lay. I pray for you and so many others. WE WILL GET THROUGH THIS! Think about what people must have thought during WW2. Fb has many good food shortage alert groups who post, share, and plan to prep as best they can for what may well be coming. Seeing the pics, reading first person accounts, and acknowledging the insane amount of food factory/fertilizer fires/explosions and the “bird flu” culling of chickens, AND the endless recent number of food recalls…..it paints a pretty convincing picture of coming manufactured USA famine. Then you have the fuel angle and DEF shortages, well….you see what is going on pretty clearly.
Personally, I couldn’t be in a relationship with anyone who wasn’t on the same page as me. You need to prep and hide it in the garage, or somewhere your wife doesn’t go. Some preppers use storage lock ups
Please don’t store any food items in the garage or other non-climate controlled space as heat and light rapidly reduce the shelf life of foods. It’s fine to store extra paper goods out there, but keep the food items including dry goods like flour and sugar inside where you can make sure the temperature isn’t above 75 or more degrees.

You have to keep prep foods in a cool place if possible. My garage gets just like an oven. I have an overlarge thermos cooler that I have a lot of stuff in and the rest is in the basement right now in other smaller styrofoam coolers. I ordered a bunch of my supplies from My Patriot Supply last summer, and I grow a few things although I do not garden as much as I used to. Getting too old for all that! Be sure to include water purifying stuff in your stash too. You can go longer without food than you can without water.
I have a disbelieving husband, although I believe he is finally coming around. It’s my daughter and her family I have tried to warn, but they refuse to listen — so, I’m leaving them to God.

I was right there with you a couple of years ago. In October 2019 I quietly started preparing. My wife finally asked what in the world I was doing. Then 2020 comes and I look like a genius. I had aways told her our supply chain is very delicate and all it takes is a simple hiccup to bring it down. Today I sent her this link and she replied, “With everything you have done to prepare I think we need to do more.”
Also in January of this year I started noticing all them empty shelves of baby formla. (Keep in mind this was before the recall and plant shutdown) I am blessed enough to have a job with a large department store chain that takes me in and out of many stores all week long. I started to see a trend and started buying baby formula for our grand daughter. Today I can find the kind we need in 1 our of 10 stores. And when I do find it the price has gone up 30%.
