Have you ever seen egg prices at $1 per egg range, or $12/doz? Hold on a few months and perhaps you will. That is the context for the scale of food price increases the USDA is now starting to predict. The highest predicted change in food costs in well over 40 years, that’s the USDA warning in their revised May “Food Price Outlook”. [DATA HERE]
This month the USDA just re-re-revised the forward price outlook, and things are grim. It likely doesn’t come as a surprise to many CTH readers because we have been discussing the convergence of events since October of 2021, when we first were able to predict Wave-1 (Dec/Jan), and Wave-2 (March/Apr) inflation. However, the underlying data for Wave-3 is double the prior two phases.
Keep in mind the data is national & skewed toward low estimations as represented by (+).
When the USDA predicts egg prices increasing by 19.5 to 20.5% (from where those prices are now), there will be regions with much higher retail increases than estimated.
Just two months ago, USDA had egg inflation at 2.5%-3.5% range, year over year. Again, that’s the scale of change; from a 3.5% forward outlook to a 20.5% forward outlook effective right now.
Food at home (grocery store) prices: up 7% to 8% in this monthly review, versus the April outlook of a rise of 5% to 6%. That means the USDA is predicting the highest grocery store price rise since 1980 when prices rose 8.1% (prices rose 7.2% in 1981). There is no reason to think the USDA forecast will not rise again in June.

If you have not taken food price stability seriously before now, please take proactive measures to secure your family. We are talking about future retail food prices that were simply unfathomable last year.
You know how much prices at the supermarket have increased in the last six months. Double that, and there’s your estimation for food prices later this fall.
Behind all the datasets, statistics, BEA, BLS, USDA and analysis of these things, there are real people living paycheck-to-paycheck that are likely to be in serious food insecurity position for the first time in their lives.
I’m not talking about poor people, I’m talking about solid upper middle-class working families with kids who are already being hit hard by gasoline, energy, housing and grocery store increases. Another twenty percent increase in food costs can easily become a crisis.
The core issue is this snowball of production costs inside the field to fork supply chain. Diesel prices, fertilizer prices, energy prices, seed and feed prices, all of it has doubled and tripled in less than a year.
Add in transportation and distribution costs that have doubled, and all of that cumulative impact is going to flow through the food supply chain from the field to the processor (wholesaler), and into the supermarket. Fresh foods, especially in the produce section, will catch many people off guard.
Not all news associated with this is bad news. As you read this you have information that allows you to take control and be proactive. YOU will not be part of the national population that is stunned in September and October. YOU know what is coming. With that in mind, do what you can today, tomorrow, this week, to be proactive and offset the impact. Taking action reduces stress.
Perhaps shop proactively for your holiday shelf stable food items now. Look at the circulars and on-line for coupons, not for then – but for use now. Perhaps learn to make some of the foods you would normally purchase already prepared. Small proactive seeds, kept in mind while carrying on day-to-day life.
I know from reading comments that many of you have planted ‘victory gardens’ this year. Those harvests are worth 50% more now they were three months ago. That’s the way to look at it. Every amount of saving matters…. and yes, grandma carefully washed the aluminum foil and reused it for a reason.

Open cereal bags with a scissors and the turn inside out when empty, wipe clean, free bags, just fold and use a close pin, fine for short term storage. My grandma used to cut them open, used to wrap my uncles lunch for work in them. Pickle jars, dreamwip containers, peanut butter jars, my wife depends on them. COFFEE cans use them
I just washed half a dozen plastic baggies and have them drying out on a line in the screen porch using a spring clothes pins. The silicone mats that I use rather than parchment paper are drying out there as well. I do use canning jars rather than baggies when I can because they can go in the dishwasher.
I seldom use foil, it’s not something I reach for. When I do, I reuse it numerous times.

So I bought eggs by the case, dipped them in mineral oil and refrigerated them. I have two refrigerators. I told my daughter and she says they are going to be old nasty eggs. So when I make cheesecake later in the year, I will remind her that it was made with old nasty eggs and she can’t have any.

I saw a sign while driving by a Panda Express (fast food), “starting $14/hour front end, $15/hour kitchen”. I had to do a double take! I feel for the small businesses who can’t find employees, because they can’t afford to pay them these days. I know multiple business owners who are stressed out, trying to find workers. Meanwhile, these corporate chains can raise the wages along with inflation like it’s nothing.
Another remark, I’m sure glad I have backyard chickens for my eggs. I collected 16 eggs today. That feels good!

A local hamburger and milk shake type place just closed because the owner said he couldn’t staff the place. I don’t know how much he was paying but prices had gone up and I waited in the drive thru lane for 25 minutes with 6 cars ahead of me. The one in front of me got a just dipped ice cream cone and that took over 3 minutes.
I noticed something the other day.
A local fast food restaurant that was hiring a few months ago at $15/hour is now hiring at $11/hour.
They still need help, obviously, but I would guess that their costs have gone up so greatly that they can not pass it on to the customers but must pass it on to the employees.
Reminds me of the Great Depression.

I would also add that retirees on fixed incomes are being hit hard as well…We lived within our means, saved, invested, and did all the “right things” but our taxes, utilities, and now food prices are all rising far more than the 3% max COLA that my husband will get on his pension. We raised our family in this house and our kids still live in the area – we don’t want to sell but may be forced to do so if things don’t change. And we have talked with many others our age who are in the same boat!
You may be able to rent out a room or two; obviously, you would have to be careful. Multigenerational families may start living under the same roof; think of the Waltons. You can close off any extra rooms or bedrooms to save on heating and cooling costs. I’ve done this and used the room or rooms as storage. You can open the doors to the bedrooms anytime you want to equalize the air; they’ll be warmer in the summer and colder in the winter. BLESSINGS! 🙂

Local Sikhs ( terrific farmers from the Punjab in India) build massive homes on the farms..many far larger than your average motel hotel.
8 families in a home would not be unusual.
It’s quite something to witness..it frustrates some however IMO it is brilliant.
We have a nice suite in our basement that we keep for family or friends in need.
A daughter in law and our middle grandson will be there for a week while maintenance is done on their place.

For the most part, the people I am talking to did NOT vote from Brandon! They, like us, made retirement plans under the Trump Administration.
My husband retired at the end of 2019, when the economy was doing well, the world was generally at peace, and it looked like we would have four more years of the same policies. We met with our financial advisor and he said that we were in a good place to live comfortably for at least 30 years and still have money to leave to our kids/grandkids. Two months later, C0v1D hit, then the “Summer of Love” and finally the Big Steal…and here we are 18 months later and the world is on fire!
We will be okay – God has never not provided for us, but these are definitely NOT the “Golden Years” we were anticipating!
Really happy for you and yours. Not so sure on my own outlook… I am postponing my retirement just to play it safe. At least until I am no longer able to do so. I enjoy the thought of possibly leaving a few modest crumbs for the kids and grand kids.

When prices started going up under Joe Stalin, I just quit driving completely…. I’m not gonna let these Commies milk me again like Obola already did. The real kicker under Obola was when they still milked me at tax time too. I completely quit working after that , pretty much retired outright…. LMAO.

I have planted lettuce, tomatoes, carrots, zucchini, and a bunch of herbs…have several families at church who raise chickens so can get fresh eggs from them. I have clipped coupons and shopped the sales forever and dinner out was already a rare occasion, so we’re already better prepared than many who never did any of those things.
But life isn’t “fair” and we all know it – my heart just hurts for those who did all the right things but will now have to pinch those pennies even harder, while the elites fly around the world lecturing all of us about how morally superior they are!
However, this life is a vapor “and after that, the Judgement”. I have to believe and rest in that and do what I can to help those who truly deserve it…

I buy a lot of Campbell’s canned beef barley soup. My last purchase was a few days ago. I was stunned as I emptied the can into a bowl, the amount of barley was about 10% of what it had been. It was almost pure broth. I opened another can to make sure it wasn’t an anomaly. It wasn’t. I read the calories and carb content on the label, and it had not changed. There is NO WAY it has the same amount of nutritional content in this drastically watered down state. So this is a misrepresentation that is fraudulent, as opposed to the sneaky shrinkage in ounces which you can detect by reading ounces etc on the label. On the other hand, I did notice the actual broth is somewhat darker and denser, leading me to wonder if they tried to “beef” up (pun unintended) the calorie content that way.
Make your own soup. It’s ever so much cheaper and way more nutritious.
Even though I make most of our soup, we still buy some because I want a big pantry.

We had 7 kids and with all the meals made, there were plenty of left-overs. At the end of the week I’d make what I liked to call ‘End of the Refrigerator Soup’. I’d put almost everything together in a pot and add some water and salt and because everything was already cooked, the soup was ready in no time. Also, every week it was different so the kids never got tired of it!

I used to use Campbell’s cream of mushroom soup for the Thanksgiving green bean casserole but now it seems that they are using GMO ingredients in it so I haven’t bought any for a long time. I guess they are adding GMO’s and subtracting noodles and barley. Do they still sell one called ‘Scotch Broth’? That one had barley in it and was a favorite of mine in the 60’s.

I just opened and subsequently threw away an entire package of cheese sticks because it was covered in some mysterious white substance. If it was mold, it wasn’t any type I’ve seen before, and all of them are individually wrapped and vacuum-sealed.
Probably just a one-off but it got me to thinking.
Kind of like the brussel sprouts I threw away today. Cant wait for my garden to produce!
We’re in an apartment so I don’t have anywhere to plant a garden. Wish that I could.
Is there a community garden in your town?
If not, could you get together with some neighbors and start one?
Are there any older folks in your neighborhood or at your church, who have space for a garden but aren’t physically able to garden? Can you provide the labor and they provide the land and then you both split the veggies?
Would your landlord let you put some raised beds, which could just be temporary, along the driveway’s edge? Or if you have a flat roof, would the landlord let you grow a container garden there? If you have a patio or balcony, you can raise food in containers.
If you have some extra space you can raise food indoors, using the Kratky method (find info about it on YouTube.)
Are there any empty lots nearby? Contact city hall and see if they know the owner. Maybe you can get permission to garden there.
There is almost always a way to raise at least a bit of food. In the 19th century many families who lived in towns and cities had a garden or raised food on a balcony and even had a few laying hens and a cow.
Every bit of food you can raise is food that you won’t have to buy.
A small garden can be the difference between being a little hungry and actually starving.

I showed one of them where they could get free seeds but she mostly took flowers because veggies are too time-consuming. I guarantee she will be the first “woe is me” when these next round of price increases hit. Sigh…
I’ve started looking at The Complete Tightwad Gazette again and working on the vegetable garden. I don’t know how much is going to be enough but I guess I better buy even more for my pantry and donate more to the food blessing boxes.

I do have a bread maker……guess it’s time to figure out how to use it.
They do a decent job. My user manual has a recipe for rolls using cottage cheese and they are amazing. I want to try the potato bread using instant potatoes next. The garlic rolls are terrific too. I hate the raisin bread recipe but it makes a good doorstop. I do like raising the dough in the machine and then putting it in a pan, re-raising it and baking it in the oven

I totally understand the “terrible cook” part; that is me. However, I have worked hard over the years to become an average cook & trust me, it was a challenge! I tried to make my first gluten-free cake (gluten-free is a family requirement) & it came out black; however, it wasn’t a chocolate cake, it was BURNT to a crisp because coconut flour cooks in less than half the time (versus regular flour) & I didn’t know that. I gave up on coconut flour & moved to a good substitute for wheat.
Now, we all need to learn to have the skills my grandma had; she grew up on a farm in Indiana. I’m thinking about trying to have chickens for eggs, but have absolutely NO IDEA what I’m doing. I keep researching homesteading, gardening for food, & self-sufficiency ideas, but get interrupted a lot (since I’m a mom). Somehow, I have to figure everything out, though, because I have people to feed! Prayers & BLESSINGS to all!!!!!
Sounds like you are a busy and GREAT mom. I am 60 now. I spent my life galavanting around the world. Now I am semi-retired. So it’s just me…….at this stage of the game, I don’t think being a good cook will happen.
Taking care of some egg chickens, that is more my thing.
Chickens are easier to take care of than a dog.
They need a safe place to live, a fenced-in run which needn’t be large, fresh water, food (which can be kitchen scraps in addition to chicken feed,) grit and oyster shells.
If your kids are old enough they can help.

Don’t be afraid to get chickens. Just have what you need before you get them.
If you get baby chicks they will need a safe place that is warm until they get older. Some folks use heat lamps but I prefer a heat plate, aka brooder plate. Much safer and uses way less electricity.
I use these two entirely portable tools at my sides at all times. Such adaptable appliances. Some people call them HANDS!
For my bread recipe (part fresh-ground whole wheat/part commercial bleached all-purpose flour), I only knead a minute before the second rise; incorporating the recommended oil as I do this, rather than adding to the mix initially. Also keeping the dough slightly on the moist side helps.

There is a possibility that some companies/drivers of the refrigerated (reefer) trucks that haul, and the cold storage warehouses that ship the products, are raising temperatures during transit -and/or- shipping product early (cost of refrigeration falls on drivers) in an attempt to save money on electricity/fuel.
A reefer trailer that sits for 2 days at a truck stop waiting to unload (because the trailer was loaded/dispatched 2 days early to save the shipper $) is expected to keep the product inside them at a temperature specified by the shipper, say, +/- °40F.
In a 70° -80° F+ outside ambient air temperature environment, in that 2 day interval, the reefer can burn through 25+ gallons of diesel.
At $5.00 a gallon…

If one raises the temperature inside the trailer a “few” degrees to save on fuel in transit, or while waiting, costs will be reduced for the owner…

In the case of bulky/dense product (bananas, carrots, potatoes, etc) these are loaded at “room” temperature of the shipper, and the temperature is then expected to be reduced during transit. (Nearly continuous operation for a “significant” number of hours)
Some shippers include temperature control recorders with their product at loading to ensure freshness at delivery. (Some)

Then after butter is made…take it out…drain buttermilk..then rinse.
You got butter! If you want salt in it..add it. Or even a wee bit of honey!

there are a lot (LOT) of no kneed bread recipes on the interwebs, both yeast breads and sourdough. Sourdough starters are surprisingly easy to start and keep going – i’m a terrible cook and i can do it – you can too!

Not anymore junkies are migrating to greener pastures, and sadly a number of old age pensioners have been stealing essentials.
We saw one old lady in tears when apprehended.
The manager was terrific and after a background check was “ let go.”
Seniors on a fixed income that were trusting and financially naive, are getting destroyed.
When we were young kind folks often brought stuff to our mum as the old man was off drunk somewhere.
We are now in a position to give back.
Last week we were able donate a large can of coffee, and an 8 lb bag of quality Basmati Rice to a senior gent.
The cost was very little, but his smile was as the MasterCard commercial says was “ priceless”
