They would actually have an extremely difficult time doing that. Once he accepts the nomination, certain election laws and state ballot laws kick into official gear. Removing him after he accepts the nomination becomes a legal quagmire. While laws are mere obstacles to Democrats, there are several conservative organizations, state legislatures, and a certain GOP candidate that would not make it easy for them.
The better play for Dems is to remove Biden prior to the nomination – which is why you saw them delay the virtual nomination that was tentatively scheduled for this weekend. There’s still some nuisance obstacles for them but they’ll clear those up with minimal effort.

I fear that if RNC convention is perceived as targeting most of the message against disaster of Biden presidency , then the impact is somewhat erased when Biden drops out of the race.
