Silken cream soup; ravioli with herbs cheese & mushrooms; Sole bathed in brown butter; Beehive-shaped flourless chocolate cake with vanilla custard, *more brown butter* & honey with ice cream… makes my mouth water.
It all sounds like fresh wholesome ingredients, elevated by preparation & presentation with extreme care, attention to the smallest detail, & layers of elegance to me.
Living on that level of life definitely has its perks.
I don’t particularly care for all the formalities. Just pile it on a plate and call it what it actually is.

If you’re wondering veloute is cream soup. Those of us who grew up with a cupboard of campbell’s cream of whatever are familiar with cream soup. Ramps are wild leeks probably mixed in the potatoes. Potatoes pave are what Americans call scolloped potatoes sliced baked in a cream sauce. But these scolloped potatoes are baked in a rectangle pan. Then cooled and refrigerated for at least 8 hours. So the sauce congeals it all gets very firm. Then it’s all cut in small pieces and deep fried

This may sound a bit cruel but when I see a woman, especially older women, with botched plastic surgery and enough Botox to pump up a tractor tire, I can only shake my head and smile.
