President Trump should have shown a video detailing the slaughtering of a beef explaining each part. That might have thinned out the press hags some so less questions afterwards.

My Dad was a 30yr USDA meat inspector. As a kid, Dad used to take me to see the “Kiil Floors”. Once I watched him shut down the entire area of the plant because he saw one hog had an abscessed tooth. He made them disinfect the entire process line before they could resume work. Fairly certain nothing like that happens anymore

People need to understand how meat gets contaminated. Specifically, cattle, pigs deer, bison etc except meat from egg animals.
If the head and guts are removed and separated properly with a consistent storage temp from 35F-40F there is an exponentially lower risk of meat containing dangerous pathogens. Meat is sterile. The hazards come into the meat from sloppy slaughtering.
There are some outliers but for the most part those times given in the chart have very little value as long as those 2 variables are mitigated, be clean when separating guts (1) and the heads (2) of the slaughtered animal from it’s meat.
An elder family member who was in the meat processing part of the supply chain gave me that explanation. It seems accurate?

In addition to beef, I hope the USDA will add pork and milk. Why does all milk have to be pasteurized and homogenized? Years ago, people had their own cows and milked them to get the milk to make dairy products. I’m talking pre-electricity. They had no refrigeration, they had no machines to pasteurize or homogenize and people got along just fine. To slightly alter an Obama phrase—–if you trust your farmer, you should be able to keep your farmer (and his/her vegetables, dairy, meat, poultry, herbs and grains).
Nope, Big Ag doesn’t want that because they have to much financial incentive to “put the farmer in his/her place and keep him/her there”. Sad reality. Just like Big Pharma squelching the use if IVM and HCQ (which were actually more effective than masking, distancing and Covid shots) in order to make billions on new drugs. Why is Big Hospital buying up the majority of small and medium sized medical practices? As the wolf said to Little Red Riding Hood–the better to EAT YOU WITH (meaning controlling what you prescribe, how many patients you must see in an hour, what tests you must routinely perform, etc).
There is a very good reason milk is pasteurized. Ask your great grandparents about undulant fever. One of many reasons the average life expectancy at birth in the United States in 1920 was approximately 54 to 55 years.
Undulant fever is another name for Brucellosis, a contagious bacterial infection that spreads from animals to humans. It is caused by Brucella bacteria, which commonly infect cattle, goats, sheep, pigs, and dogs. People catch it by drinking unpasteurized milk or eating unpasteurized dairy products.
It can also spread through contact with infected animal blood or tissues, mostly affecting farmers, veterinarians, or slaughterhouse workers. It does not spread easily from person to person. The name “undulant” comes from the fever pattern, which rises and falls in waves over time. Symptoms include high afternoon fevers, chills, heavy sweating, severe fatigue, headache, and joint or muscle pain.
Without treatment, the sickness can last for months or even years. Doctors treat undulant fever using a combination of prescription antibiotics, such as doxycycline and rifampin. Patients typically need to take these medications for 4 to 6 weeks to clear the bacteria completely and prevent a relapse.
I hope This administration looks into just how many cattle are lost to ranchers in thoes affected states. Then puts restrictions onto the method and number of kills. That they can only kill wolves that cross into their property. These things can go wrong on both sides of the issue.
I buy beef directly from the rancher. The cattle has to be transported to the nearest USDA processing facility. Several days off the ranch is required-and many miles driven. We need more processing facilities. Could be State run with USDA regulations. One in every county would be great.
