I learned this trick from getting a Win10 laptop. Use a wireless card in your desktop and set the connection “metered.”
Due to the liability that causing you to spend money you didn’t authorize would cause them, they can’t force the machine to download updates through any connection you designate as metered without your permission.
Then just ignore the occasional “this is out of date” alert.
