I have been frustrated by the bag steaming. I wonder if the water add helps?
Those protective layers don’t cause a problem when sauteed. But the worst was when I tried using a blender without peeling or sauteing. Stupid little ninja stars cutting up my gums.
I watched your video. Interesting. I lived in Guadalajara, Mexico for several years long ago and loved the regional cooking.
I make salsa verde (green chile sauce) all the time in large batches. I freeze it in my old ice cube trays and then store it in freezer zip lock baggies for future use.
I never add the poblanos but I do add serrano chiles. Without the serranos’ distinctive flavor it’s just not salsa verde. I could drink that stuff like water. Serranos and jalapenos are NOT interchangable. They each have their own distinctive flavor.
If you think the serranos are too hot then cut them lengthwise and remove the seeds AND the whitish membrane which contains a lot of the heat.
Enchiladas Verdes:
Shredded, cooked chicken breast
Corn Tortillas
Salsa Verde
Queso Fresco
Diced White Onion
Chopped Cilantro
Fry the tortillas about 30 seconds on each side. Remove and dip in the salsa verde. Fill with the shredded chicken breast and add about a tablespoon or so of the salsa verde over the chicken. Roll up and place seam side down. Add more salsa verda to completely cover the enchilada and put on dinner plate. When you have made the number of enchiladas you want zap them in the microwave. Remove and sprinkle with the onion, cilantro and crumbled queso fresco. Yum.
Regarding the rice. Be careful with how much oil you add. Use only enough to barely cover the rice while cooking it. Too much oil and your rice will come out mushy and will stick together and not be light and fluffy. I always add couple of whole, uncut serranos to my rice. If not cut you will get some of the flavor with none of the heat.
In Guadalajara they never used just sour cream. They use Crema Fresca (fresh cream). It comes in containers like sour cream but is lighter in consistency. It does contain a very little bit of sour cream so it has a very light tang. The sour cream flavor does not overwhelm the other flavors.
The mexican oregano is a similar lighter taste than regular oregano. It is not really oregano, just has a similar flavor. And as the fellow did, you always crush it in your fingers while adding to your dish.
When eating clear broth soups they would always add spoonful or so of the crema fresca. Adds a nice flavor.

Yeah, he said poblanos. It’s probably a regional thing. That’s how they make it where he lives. Nothing wrong with it, I just much prefer the serranos. And I like them hot!
I think I should clarify about the oil in the rice. It shouldn’t ‘cover’ the rice, it should just coat it. Idealistically, there should be no oil in the pan other than that which coats the rice. If you tip the pan no oil should be seen rolling around.

I’ve always been knocked out by this 80s music video, the characters, the physicality / combat going on, the two guys standing there and slapping each other, the turtle woman waving around doing sign language for the deaf, the trampoline-jumping guys … just fantastic characters to have conceptualized / costumed / choreographed.
I remember the song, never knew they had made a music video for it tho. Probably did not get much airplay on MTV & 1987 I was either still in trade school or just graduated & went to work, so not watching much MTV as I did not have cable & for some reason UTool was not around at the time AND Al Gore had not invented the internet yet.

I was much taken by the image. It captures a lot of the late night sense of “aloneness” that you’ll find in Edward Hopper’s famous “Nighthawks” painting from 1942.
Both of the artists are communicating the “Liminal” sense of “betwext and between” that you can sometimes find in early morning hours. Since I’ve always tended to enjoy the early morning hours, knowing what liminality is has allowed me to better understand why I like staying through the early morning hours.

Biography: Dvorák was a prolific composer, with over 1000 works to his credit. He is most remembered for his Symphony No. 9 (“From the New World”), his Slavonic dances, and his Cello Concerto in B Minor. His penchant for incorporating local folk music and nationalistic themes into his music is prevalent throughout his catalogue.
He spent the early part of career as a respected violist, principally with the Bohemian Provisional Theatre Orchestra in Prague, and a church organist. In his thirties, he began to devote more attention to composing, and came to the attention of Johannes Brahms, who recommended Dvorák to his publisher in 1877.
As his international reputation grew, he was offered the directorship of the progressive National Conservatory of Music of America in New York City, which he accepted in 1892. The school admitted Native American, African-American, and female students on a merit basis without regard to ability pay. In his time there, Dvorák formed a friendship with student Harry Burleigh, who spent hours singing and documenting traditional American Spirituals for Dvorák. While in the United States, he wrote his most popular work, the Symphony No. 9 ‘From the New World’ (1893), as well as the Cello Concerto in B minor (1895).
As the Conservatory faced uncertain economic issues, his stipend was halved. This coupled with bouts of homesickness led him to return to Prague in 1895. In 1901, he took over the directorship of the music conservatory there, until his death in 1904.
Aside from music, he was keenly interested in locomotives and pigeons.

Matthew Henry Commentary for Isaiah 40At this chapter begins the latter part of the prophecy of this book, which is not only divided from the former by the historical chapters that come between, but seems to be distinguished from it in the scope and style of it. In the former part the name of the prophet was frequently prefixed to the particular sermons, besides the general title (as ch.2 1; 7 3; 13 1); but this is all one continued discourse, and the prophet not so much as once named. That consisted of many burdens, many woes; this consists of many blessings. There the distress which the people of God were in by the Assyrian, and their deliverance out of that, were chiefly prophesied of; but that is here spoken of as a thing past (ch. 52 4); and the captivity in Babylon, and their deliverance out of that, which were much greater events, of more extensive and abiding concern, are here largely foretold. Before God sent his people into captivity he furnished them with precious promises for their support and comfort in their trouble; and we may well imagine of what great use to them the glorious, gracious, light of this prophecy was, in that cloudy and dark day, and how much it helped to dry up their tears by the rivers of Babylon. But it looks further yet, and to greater things; much of Christ and gospel grace we meet with in the foregoing part of this book, but in this latter part we shall find much more; and, as if it were designed for a prophetic summary of the New Testament, it begins with that which begins the gospels, “The voice of one crying in the wilderness” (ch. 40 3), and concludes with that which concludes the book of the Revelation, “The new heavens and the new earth,” (ch. 66 22). Even Mr. White acknowledges that, as all the mercies of God to the Jewish nation bore some resemblance to those glorious things performed by our Saviour for man’s redemption, so they are by the Spirit of God expressed in such terms as show plainly that while the prophet is speaking of the redemption of the Jews he had in his thoughts a more glorious deliverance. And we need not look for any further accomplishment of these prophecies yet to come; for if Jesus be he, and his kingdom be it, that should come, we are to look for no other, but the carrying on and completing of the same blessed work which was begun in the first preaching and planting of Christianity in the world.
In this chapter we have, I. Orders given to preach and publish the glad tidings of redemption, ver 1, 2. II. These glad tidings introduced by a voice in the wilderness, which gives assurance that all obstructions shall be removed (ver 3-5), and that, though all creatures fail and fade, the word of God shall be established and accomplished, ver 5-8. III. A joyful prospect given to the people of God of the happiness which this redemption should bring along with it, ver 9-11. IV. The sovereignty and power of that God magnified who undertakes to work out this redemption, ver 12-17. V. Idols therefore triumphed over and idolaters upbraided with their folly, ver 18-26. VI. A reproof given to the people of God for their fears and despondencies, and enough said, in a few words, to silence these fears, ver 27-31. And we, through patience and comfort of this scripture, may have hope.

WE ARE FIGHTING A SPIRITUAL WAR OF GOOD VERSUS EVIL
PRAYING ON THE ARMOR OF GOD
Father God, I now follow your command to put on the full armor of God, because my battle is not against flesh and blood but against rulers, authorities, the powers of this dark world and against spiritual forces of evil in the unseen world.
I first pray on the Belt of Truth that it may be buckled around my waist, may I be centered and encircled by your truth dear Lord. Hem me inside all that is true and right, and may I be protected and held up by the truth of your living word, in my Lord Jesus name.
I pray on the Breastplate of righteousness, please protect my vital organs and my inner man, cover my integrity, my spirit, and my soul. Guard my heart for it is the wellspring of life, please strengthen and guard the most vulnerable places in my life with that which is right, good, and noble that I might not receive a fatal blow from the enemy, in my Lord Jesus name.
I pray on the Gospel Shoes of Peace. I choose to stand in the shoes of your good news, and on the firm foundation of my Lord and Savior Jesus Christ, the solid eternal rock. All other ground is sinking sand, I pray that I will not slip or fall, but that my feet would be firmly fitted on your lordship, my Lord Jesus. I choose to stand on you, so that the peace of God, which transcends all understanding will guard my heart and mind in Christ Jesus, the eternal Rock of Ages. I receive your holy peace now my Lord, from the sole of my feet to the crown of my head, in my Lord Jesus name.
I pray the Shield of Faith into my hand now. As I take up the shield of faith, I ask that you might extinguish every dart and arrow that is launched from the enemy to take me down spiritually, physically, mentally, emotionally, and every attempt of the enemy to destroy my joy. I ask that my faith in you would make it flame out. Extinguish every flaming arrow that would come against me, my life, my family, my home, or my ministry. May my faith always be out in front of me like a shield. Give me the courage to “faith my fears” by choosing to walk by faith and not by sight, in my Lord Jesus name.
I pray on the Helmet of Salvation, that you might protect my mind from the thoughts that can lead me astray. I choose to take every thought captive, and arrest all intentioned ideas and motives that would harm others, or distract me from your holy will for me. I submit every captured thought to the Lordship of my Lord Jesus Christ, and ask that you would imprison those thoughts that are not of you my Lord. Transform my mind and renew my thinking that I may think God thoughts, and have a sober mind that is focused on your glory. Please protect me from being double minded that I may allow my mind, I reject to live an earthly life, because I choose to live a holy one, governed by you My Lord Jesus, the prince of peace, please have my mind to be saturated with the holy mind of Christ, in my Lord Jesus name.
Finally, I take up the Sword of the Spirit which is the holy word of God, I pray this powerful offensive weapon into my hand, and ask that your holy word would be fitting for every encounter I face. As the enemy gets close to me, please give me the insight, wisdom, and skill to wield the word of God to drive away the enemy, in my Lord Jesus name.
May the enemy and his team flee from me, upon hearing the word of God spoken by the power and direction of the Holy Spirit. Give me the sword of the spirit to cut through the wiles of the devil, so that I may discern the schemes of the enemy when he is near.
With all kinds of prayers, supplication, and intercession I pray to you my Lord God as the one who fights my battles. Now that I’m in your holy powerful armor, I walk away covered and ready to face my day as you go before me, and please protect me in the midst of the spiritual warfare in this unseen world, in my Lord Jesus name.
Thank you my Lord, for the spiritual weapons of armor and prayer that you have given me. It is written no weapon formed against me shall prosper, and you will refute every tongue that accuses me.
