Have an omelet
sauté some chopped onion and chopped mushroom
– in little bit of olive oil and dab of butter
blanch broccoli florets (or quick cook in microwave; in water –of course)
beat eggs (add some salt & pepper)
-add and mix/beat a bit of milk (or ricotta if you have some handy: yuuumy!)
add broccoli and chopped mushrooms to onion and mushrooms
~ on low heat pour in beaten egg
add some pinches of shaved ham
add cheddar (or other) cheese over top
add a little grated –good parmesan or romano cheese
cover
Toast or english muffin with butter & jelly
-or sliced dago and/or french bread
or
scrambled eggs on toasted english muffin with mayo
and some beans
~~I love breakfast any time

Here’s another true story . . . A friend and early mentor was a gifted race mechanic. On a trip to New Orleans he was robbed and shot. The injury was life threatening. He needed complex surgery but, like more than a few car fixers, didn’t have medical insurance. Things did not look promising for my friend.
One of his customers, a gifted surgeon, organized a special team . . . If you can believe it, he brought together surgeons, surgical nurses and even operating room facilities—all donated.
They successfully performed the very complex surgical procedures and saved my friend’s life. Nothing was formally said about this. Obviously even the hospital’s admin “looked the other way”.

Up very early this morning.
Had success in my homemade Greek yogurt experiment and then again oven roasting a big old turkey that I carved and placed into the freezer for portion use. I didn’t brine it as I usually would using Alton Brown’s Oven Roasted Turkey recipe. This time, I split the beast, laid it flat (I can’t easily remember the term for that) and we seasoned it with butter, Herbs d’ Provence, Kosher coarse salt, pepper, sage, rosemary, and thyme. Chopped celery, carrots, onion, apples, bay leaves, and Malbec wine, underneath. Forgot to add broth or water…oops… but gladly didn’t need it and I even had to drain off a couple times… and bird turned out perfect.
Daughter worked with me throughout and for the first time ever… I actually blended the cooked veggies and apples along with the drippings and added NO flour for the gravy. Turned out the most amazing gravy I’ve ever made… and no flour or thickener needed.
So daughter now knows in great detail… the prep… the measures. She blended the spices and I about fell over when she dumped a rather large pile of expensive herbs in the mixing bowl. But carry on she did and the bird turned out superb!
Butterflying the bird made it waaaaay simpler to carve and portion for freezing. So impressed and I’ll do it this way from now on.
Will have nice sandwiches and half dozen meals at least from that thing! I enjoy teaching daughter to bargain hunt and to prep ahead so the labor is easy later.
Had a nice Reisling with our dinner and we finished watching “The Aviator” together.
The weekend was too short and I failed in my attempt to get the Christmas tree into storage. Hard to let it go, I guess. This week for sure!
I pray you and Tink and all our Treeper friends good health, happy thoughts, and spiritual wellness. We have the greatest Hope in our God and His Mercy reigns new every day.

The barn cat
Millie Mouse is HUGE and super strong. Millie loves cuddles and hops like Tigger over your shoulder and lands spontaneously into your lap. A few gentle pats and she soon smiles and slobbers. Little goof.
Maggie Moo is a compact rotund little thing who cuddles on her own terms. Usually aloof and independent by day… bed snuggler and blanket burrower by night.
Timmy and Harold the Maine Coon are well. They “helped” with the turkey yesterday dutifully taste testing the scraps.
All good kitties and perfect ladies and gentlemen… well, except Millie in her Cosmo Kramer kind of manners.

One of our two waifs who have found us marched right in for brekkies this morning, then sauntered back to his bedroom and settled in. He really is such a love. We are making very slow progress with the other. Last night he (or she) followed me in from the garage further than he has ventured before and ate a bite before sitting at the edge of the fireplace to stare at us. Then off for a reconnaissance to our bedroom before racing out into the night. A small victory…
And so now I suppose we have to name them, something we’ve always found difficult. We’ve had an Oscar, George, Sammy, Fidget, Decker, a Bubble and a Squeak, Polly, Buster…but so far we are struggling with these two. A definite work in progress 😸 Blessed be your day, girl…

A girl I used to date in the 80’s had creative names for cats.
She had a couple of kittens named Shampoo and Conditioner.
Then she had a momma cat with three kittens which she named Bacon, Lettuce and Tomato.
There were more I can’t recall, but I got pretty tickled at her cat names back then.
So all you gotta do is think in a slightly different way.
And then, of course appearances can help with the naming.
When my little girl was a little girl she was given a kitten, as was my son. His cat became Captain, short for Captain Kirk since he liked Star Trek.
My little girl, when asked about a name for her kitten, said “Laura”. I said “honey, that won’t work, that’s your name. Maybe you could name him after something he looks like.”.
She thought about it for a moment and said “I think I’ll name him…..Fuzzy.”
And Fuzzy it was.
Orrrrrrr…. you could give them gang names. Some examples:

I think dogs and cats have associated with humans for so long that they can understand some human emotions. Just sayin’ 🙂
I enjoyed reading about your cooking adventure . . . However, you were talking to someone who does a so-so job of boiling water. It was my late wife who was the excellent cook in our relationship (I’m much better at porting cylinder heads), alas. Still, I greatly appreciate and understand excellence when I see it. I got home and tried my Greek yogurt. It is TART and slightly flavored with honey and pure vanilla. Very good and REALLY thick – thicker than a good sour cream – now kiddo is throwing down the gauntlet that I try to make her buffalo mozzarella balls. One of us… is never satisfied.
Tried to eat a cold turkey leg for lunch. I say “tried” because aloof Maggie Moo (my Maggie) decides to be my BEST Buddy and I catch her mouth open, standing OVER MY TURKEY LEG. Seriously, the leg is bigger than she is! She disgruntledly harrumphed and hopped from my desk just in the knick of time. I’ve no idea whether she licked it or not. I ate it anyway. It was simply too sublime to toss and, well… she’s a really clean cat. Gosh, I hope she didn’t lick her butt. Savannah had a HUGE bite of my turkey leg, too… so I guess we will both die of the cat contamination. LOL

I was having issues getting my good butcher block meat scissors so gross, so I used my really good kitchen knife to cut the back bone out of it. Then, I flipped that sucker over and squished it real good to lay it flat, then I sliced it right down and had to split it into two large roasting dishes. I got a little greedy with the SIZE of the bird!!!!
It truly is the VERY BEST bird cooking experience and turned out beautifully and so EASY to CARVE for presentation and storage. Highly recommend it to anyone interested. So much cheaper than deli cold cuts and way, way better. Portion out and have over noodles on cold days… anybody hungry???
Next time…. I’ll do the Alton Brown Oven-Roasted Turkey brine and then SPATCHCOCK that beast!!!! Woooowwwww. The turkey leg was outrageously good cold. Two hours to cook. 450 first 30 and 350 last 1 and a half hours.
Now, Mommy needs a nappy poo. Ahhh Tryptophan.

I was blessed with a mom who was an excellent cook and we were also a family of very modest means when I was a child.
In my former life, I was married at 16 (don’t ask, long story) and was lucky to have anything but change in my pocket. But…….the lessons my mom taught me saved the day. I could make a chicken serve us for at least 5 meals, and my mom’s goulash – heavenly and cheap! It takes the ability to read a recipe, planning skills, and motivation. Also, being able to call my mom for help on occasion!
One of my children (these are people in their 50’s) has always simply refused to cook – but is perpetually short on funds. Go figure. Food cost is one of the few recurring expenses over which we have some control.
The other kiddo is recovering from a surgery that has kept him home for several months. He cares for his mother in law, who is in the throes of advanced Alzheimers, during the day while his wife works. He has made a game out of shopping the sales (with his MIL), planning the menus, and making terrific food for his family. Sometimes he will call me after he has costed out the price per meal! We even one-up each other. 😁
Such a gift you are bequeathing Savannah. You (and the kitties, of course!) are blessed in so many ways.

I share our little trevails in hopes that I inspire someone else to join me in my madness. Plus, it’s kind of uplifting to create. Shed a little sunshine.
My mother could only make like five things and I really only liked maybe two of them, but she died when I was 9… and my military old-school father was NOT JULIA CHILD. He made crock pot beef stew that was… quite literally….. sweet, tangy, and fluorescent lime green!!!! He used one of those nasty bottles of Kraft bbq sauce and then he would add peas and they would burst and give it this funky green phenomenon.
Or… it would be his version of Chinese… Chung King canned what-the-hell am I eating that I won’t EVER step foot in a chinese restaurant because my father ruined my childhood!!!! (Until I grew up and realized that was he was doing was really food abuse.)
I loved my parents and they taught me a lot of things… mostly what NOT to do…. but my culinary skills came from a sensitive palette and living in GREAT places in our country. The ability to deconstruct an excellent restaurant meal is one of my gifts and joys and recreating it home for much less money. Over time… and with lots of reading my cookbooks (especially the Betty Crocker Red Book)… I learned what works, what can be replaced, and what can be tweaked to create some bomb-diggety cooking. Just have to be a little adventurous.
Savannah is spoiled to the core and has no idea what it would be like to be in a habitat with parents that didn’t cook. She spent the night with a girlfriend a couple of times and their family ONLY ate out, like your daughter. Savannah was like “Mom, they only eat Panda Express…. ” She actually preferred to skip the meal than succumb to the culinary assault. She wasn’t hungry anyway… I had just fed her before she left. LOL
I know that I win when she’d rather eat my home cooking than her free work semi-fast, but decent, food.
It truly is a JOY to cook and feed those you love. With economy grocery stores like Aldi’s… you can eat like a King and pay like a pauper. I know… and now that I know… even if wealthy, I’ll never go back to more expensive alternatives. Why would I mess up the chemistry set I’ve trained myself with?

I have been legally blind for fifteen years and have worked with Leif, my guide dog, for eleven years.
Early on in our working life Leif played his paw and showed me just how shrewd he is at gaming a situation for treats.
We were in training, working in an area to train me to work in places without a sidewalk. We had to cross a street, but across the street unseen by me. Was a parked car. Leif led me just far enough to line me up with the curb behind that parked car. Remember no sidewalk so we would have to stay on the street not being able to walk off the street because that would mean walking into peoples gardens and pushing through bushes and around trees.
So I tell Leif to lead me across the street, he does so, taking me behind the car. Give treat for indicating the curb.
Turn right, take two steps forward. What? Dog stops. Indicates obstacle. I reach out there is a car in the way. Give Leif a treat.
Turn right, Leif walks a couple of steps and stops. We have reached the back passenger side of the car. Good dog. Treat.
Turn Left and forward a few paces and we stop again. Now we can turn left in front of the car. But first thing. This deserves another treat.
Order left turn. Reach curb again so all stop. Deliver more treats. He had been faultless in his guiding so it’s a jackpot payout of kibble.
Meanwhile I can hear laughing behind me.
That was my sighted instructor. I asked what had happened.
Jordan my instructor settled down. “Leif could have brought you straight across the junction. Instead he took you just far enough to go behind the car.

I think readership of CTH may be being squelched. Less likes, less acknowledgement. Maybe its so much volume people can’t read as much. Maybe the football game, or crawling out from cold weather.
I am always suspicious. CTH is a high prize target for those who wish to quench our spirit. It has been attacked many times.

Some of the vitriol is just grating, but I appreciate reading others opinions that can sometimes enhance my own. I enjoy the open dialogue… even if I don’t always agree with it… or even if it comes off mean.
I’ve been fortunate that the Brave browser hasn’t adversely affected the viewability.

WE ARE FIGHTING A SPIRITUAL WAR OF GOOD VERSUS EVIL
PRAYING ON THE ARMOR OF GOD
Father God, I now follow your command to put on the full armor of God, because my battle is not against flesh and blood but against rulers, authorities, the powers of this dark world and against spiritual forces of evil in the unseen world.
I first pray on the Belt of Truth that it may be buckled around my waist, may I be centered and encircled by your truth dear Lord. Hem me inside all that is true and right, and may I be protected and held up by the truth of your living word, in my Lord Jesus name.
I pray on the Breastplate of righteousness, please protect my vital organs and my inner man, cover my integrity, my spirit, and my soul. Guard my heart for it is the wellspring of life, please strengthen and guard the most vulnerable places in my life with that which is right, good, and noble that I might not receive a fatal blow from the enemy, in my Lord Jesus name.
I pray on the Gospel Shoes of Peace. I choose to stand in the shoes of your good news, and on the firm foundation of my Lord and Savior Jesus Christ, the solid eternal rock. All other ground is sinking sand, I pray that I will not slip or fall, but that my feet would be firmly fitted on your lordship, my Lord Jesus. I choose to stand on you, so that the peace of God, which transcends all understanding will guard my heart and mind in Christ Jesus, the eternal Rock of Ages. I pray the Shield of Faith into my hand now. As I take up the shield of faith, I ask that you might extinguish every dart and arrow that is launched from the enemy to take me down spiritually, physically, mentally, emotionally, and every attempt of the enemy to destroy my joy. I ask that my faith in you would make it flame out. Extinguish every flaming arrow that would come against me, my life, my family, my home, or my ministry. May my faith always be out in front of me like a shield. Give me the courage to “faith my fears” by choosing to walk by faith and not by sight, in my Lord Jesus name.
I pray on the Helmet of Salvation, that you might protect my mind from the thoughts that can lead me astray. I choose to take every thought captive, and arrest all intentioned ideas and motives that would harm others, or distract me from your holy will for me. I submit every captured thought to the Lordship of my Lord Jesus Christ, and ask that you would imprison those thoughts that are not of you my Lord. Transform my mind and renew my thinking that I may think God thoughts, and have a sober mind that is focused on your glory. Please protect me from being double minded that I may allow my mind, I reject to live an earthly life, because I choose to live a holy one, governed by you My Lord Jesus, the prince of peace, please have my mind to be saturated with the holy mind of Christ, in my Lord Jesus name.
Finally, I take up the Sword of the Spirit which is the holy word of God, I pray this powerful offensive weapon into my hand, and ask that your holy word would be fitting for every encounter I face. As the enemy gets close to me, please give me the insight, wisdom, and skill to wield the word of God to drive away the enemy, in my Lord Jesus name.
May the enemy and his team flee from me, upon hearing the word of God spoken by the power and direction of the Holy Spirit. Give me the sword of the spirit to cut through the wiles of the devil, so that I may discern the schemes of the enemy when he is near.
With all kinds of prayers, supplication, and intercession I pray to you my Lord God as the one who fights my battles. Now that I’m in your holy powerful armor, I walk away covered and ready to face my day as you go before me, and please protect me in the midst of the spiritual warfare in this unseen world, in my Lord Jesus name.
Thank you my Lord, for the spiritual weapons of armor and prayer that you have given me. It is written no weapon formed against me shall prosper, and you will refute every tongue that accuses me.
Thank you Father God, my Lord Jesus and the Holy Spirit, that I am more than a conqueror in my Lord Jesus. I pray all of this in the mighty name of my Lord God and Savior Jesus Christ, Amen.

They already have helped in N. Carolina using their own money to build mini-houses. Now they are willing to help with disaster relief and helping build the wall.
Personally I think they should be reimbursed for the cost of materials and paid per diem to cover the other costs. That way their only cost would be the labor they gave.
