I’m not sure how everyone feels about this new effort to make bugs into food for humans, but everything about it seems weird. A Canadian company is now celebrating the opening of a manufacturing facility in Ontario what will generate 9,000 metric tons of crickets for people to eat.
I will not be eating the bugs, slugs or any other creepy crawling critter regardless of “protein transfer efficiency.” Nope. Not happening.
(CANADA) – On May 26th, Aspire Food Group announced that it has completed construction of its alternative protein manufacturing facility. London, Ontario is now home to the world’s largest cricket production facility.
Aspire’s new plant will reportedly produce 9000 metric tons of crickets every year for human and pet consumption. That’s about two billion insects to be distributed annually across Canada and throughout the United States.
Aspire also reports that it already has orders for the next two years.
Crickets are currently being explored as a protein-rich superfood. They contain fibre and are already found in grocery stores and restaurants, and have a smaller environmental footprint than traditional protein sources. (read more)

However in many cases there is tremendous nutritional value in a fish head..particularly a Spring Salmon. The head is often packaged and sold separately.

Sally Fallon’s book “Nourishing Traditions” has a lot of cultural anecdotes/quotes about the health benefits of different soup stocks and traditional dishes. Fishhead soup or stock is one of the dishes I’ve wanted to try for a while because of the nutritional value.

Many use fish bones and the head to make Fish bone broth. Actually quite good and the basis for some Asian cooking.
I buy salmon heads sold separately at the Korean grocery store. I also buy salmon steaks or fillet but love salmon heads more, usually steamed with sea salt and lemon slices. Fish heads and bones are usually boiled to make fish broth. The Spanish people (in Spain) also use fish “waste” and prawn shells to make fish broth for seafood paella.

We will eat bugs and won’t even know it. Read the ingredients on processed stuff carefully in the future. Amino acid supplements including leucine, isoleucine, valine, methionine, tryptophan, threonine, lysine, histidine, and phenylalanine, may come from processed bugs and they are NOT going to tell us where they came from.

Best advice is eat fresh fruit and vegetables, dried beans and grains, and non-processed meat fish and poultry. If you make it yourself, you know what’s in it.

Had to read more about crickets as food…UGH. There are 20,000 farmers in Thailand raising 7500 tons of crickets for food. The UN is promoting crickets for food because crickets or cricket flour adds to food security with less environmental effect than cows. Cricket flour can be added to pasta, bread, crackers, and cookies and is being used in protein bars (such as Exo protein bars), pet foods, livestock feed, and dietary supplements.
Crickets can have parasites, diseases, and viruses….double UGH!
