For meals this weekend, we are hollowing out the freezer of leftovers.
Homemade chicken and noodle soup last night.
Tonight was pasta with red sauce made with chopped flank steak, Greek seasonings, and olives.
For dessert a strawberry rhubarb pie I found and stored.
This Tuesday, we pick up our 50 lbs of peaches from The Peach Truck. We just finished our last frozen package from last year’s bounty in late May. Sure were delicious, especially in the winter months.
We will take the 4th of July holiday to blanche, peel, slice and bag them in quart size freezer bag for storing in the deep freeze.
Bubba Gump Peach Company is open for business: peach cobbler, peach pie, peach smoothies, peach yogurt, peach and ginger chutney, peach salsa, belgian waffles with peaches, peach infused sparkling club soda, peaches and cream oatmeal.
My herbal garden is doing terribly, but I think my patio garden will yield tomatoes and jalepenos this year.
I’ve got fixings for about 40 people for a righteous sandwich line for some folks working at the church. Roast beef, turkey, honey ham, Black Forest ham, salami… five kinds of cheeses, five kinds of toothy breads, and various other accompaniments… horseradish, seeded mustard, blue cheese stuffed olives, assorted chips, and Belgian cookies.
I’m whipped. No cooking this weekend feels deeply satisfying. Love my deep freeze. A little extra work making a big meal with leftovers sure helps these working weekends. Even a single could appreciate homemade bone broth that tastes just as good six months from now as the day it was made in the mini pressure cooker.
