Back in the 70s I put myself through college packing grapes for Giumarra Vineyards in the summer. I made much more money than I would have made in any office job. I didn’t have to spend precious money buying ‘office’ clothes. They even paid for health care coverage.
Yeah, it was hot but the money more than made up for it. You were paid according to how fast you packed and the quality of your packed boxes – were they aestheitcally pleasing. I was their 2nd fastest, best packer. No. 1 was another white gal.
If you live in a farming area take a drive out to see the fields during harvest time. Notice all the cars of the harvesters parked there. New cars, not old junk heaps.
Stop accepting the lies about farm laborers being paid nothing. Think about it. How could they have all the money to send back to Mexico if they were making nothing? They would be spending all the supposed pittance just to eat and have a place to stay.
At least that’s they way it is in California, Central Valley.

“It is good to trust in the Lord. (1-18) The coming of Christ in his kingdom.” (19-29)
19-29 Those who saw Christ’s day at so great a distance, saw cause to praise God for the prospect. The prophecy, ver. 22,23|, may refer to David’s preferment; but principally to Christ. 1. His humiliation; he is the Stone which the builders refused: they would go on in their building without him. This proved the ruin of those who thus made light of him. Rejecters of Christ are rejected of God. 2. His exaltation; he is the chief Cornerstone in the foundation. He is the chief Top-stone, in whom the building is completed, who must, in all things, have the preeminence. Christ’s name is Wonderful; and the redemption he wrought out is the most amazing of all God’s wondrous works. We will rejoice and be glad in the Lord’s day; not only that such a day is appointed, but in the occasion of it, Christ’s becoming the Head. PRAYING ON THE ARMOR OF GOD
Father God, I now follow your command to put on the full armor of God, because my battle is not against flesh and blood but against rulers, authorities, the powers of this dark world and against spiritual forces of evil in the unseen world.
I first pray on the Belt of Truth that it may be buckled around my waist, may I be centered and encircled by your truth dear Lord. Hem me inside all that is true and right, and may I be protected and held up by the truth of your living word, in my Lord Jesus name.
I pray on the Breastplate of righteousness, please protect my vital organs and my inner man, cover my integrity, my spirit, and my soul. Transform my mind and renew my thinking that I may think God thoughts, and have a sober mind that is focused on your glory. Please protect me from being double minded that I may allow my mind, I reject to live an earthly life, because I choose to live a holy one, governed by you My Lord Jesus, the prince of peace, please have my mind to be saturated with the holy mind of Christ, in my Lord Jesus name.
Finally, I take up the Sword of the Spirit which is the holy word of God, I pray this powerful offensive weapon into my hand, and ask that your holy word would be fitting for every encounter I face. As the enemy gets close to me, please give me the insight, wisdom, and skill to wield the word of God to drive away the enemy, in my Lord Jesus name.
May the enemy and his team flee from me, upon hearing the word of God spoken by the power and direction of the Holy Spirit. Give me the sword of the spirit to cut through the wiles of the devil, so that I may discern the schemes of the enemy when he is near.
With all kinds of prayers, supplication, and intercession I pray to you my Lord God as the one who fights my battles. Now that I’m in your holy powerful armor, I walk away covered and ready to face my day as you go before me, and please protect me in the midst of the spiritual warfare in this unseen world, in my Lord Jesus name.

I’ve baked 9 loaves which have not been good. Flat, heavy, dense… or waay too hard. I’ve tried sandwich sourdough recipes too.
I did successfully make pizza crust twice..once w a failed sourdough bread dough, and once with discard..
I will not give up. I’ve kept my starter alive since April, got it from a niece.
My dough’s are too sticky… once I think I over-proofed.. I’ve watched a ton of videos.
Any tips are greatly appreciated.

suggest to go to king arthur baking website, if you havent tried that yet.
we’ve had luck with their products, baking tools, and instructive videos.
also, we’ve even called them and they have professional bakers that can guide you.
starter can be somewhat tacky/sticky, so I wouldnt try to overcorrect it.

I do know from my personal experience that moisture in the air is very important to having the dough rise propertly. If you run your a/c it sucks all the moisture out of the air and you end up with heavy, dry loaves. You might try putting a damp, not drippy wet, kitchen towel over the top of the bowl with the dough while rising to provide more moisture.
I’m sure there are other causes, too, but I know lack of moisture in the air can cause your problems.
Biggest problem is you really cannot buy proper high gluten bread flour in the grocery store. (probably intentional, wouldn’t want to lose selling those 5$ loaves of bread if you start baking it yourself)
I would suggest looking locally at businesses that should make their own baked items from scratch but most will use frozen / defrost / rise / bake method as it is a really easy method for minimum wage employees to not screw up. (think that underground train sandwich place)
I started to use the Gold Medal flour in recent years as it has 2% or more protein in it instead of the food-service branded version of high gluten flours. While I use it for pizza crust, it makes fabulous bread loaves as well as bread sticks.
Comes in a 50lb bag & is less than 30 bucks per depending on the time of year, see if someone locally (real restaurants) will order/sell it to you. Shamrock # is 0471071 > Gold metal all trumps mfn# is 50143000. This is also an unbleached version of flour which there are less choices for unbleached. I see Kroger only offers King Arthur bread flour as unbleached all others are all purpose.
Depending upon where you live you might also have a retail <Shamrock store> or a <Gordon’s food service> to buy from.
I really can’t help with hydration % (sticky) as since I am @ 7000 ft altitude it will be way different rates for you as well as techniques.
Heck, I can’t even make Rice up here, my tried and true way @ 500 ft alt don’t work, nor should I really eat it anymore anyway.
I believe this is the <book> (among others) I bought (most used) 20ish years ago that explains in detail bread baking & hydration %’s & various modifiers to get the bread you want such as eggs & fat.
Bread baking is an art, expect to fail a lot before you get it right.

As for Sourdough, you can make your own tasty starter rather easily from scratch, big batches have always been foolproof for me.
5 lbs whole wheat unbleached flour (it has flavor & the bits the yeast feast on have not been removed or bleached out)
1 packet of not expired yeast
1 cup sugar (preferably cane) tho volume matters little as it is a kick starter for the yeast to eat (buddy told daughter when asked why does it bubble… A: yeast f_rts …. oh dad…… even tho it basically is YF’s. LOL
5 lbs water (you can use bottled if you like, I always used tap w/o issues) AKA 100% hydration
Put in a large <food box> with a lid (sams used to sell them perhaps costco too)
mix until smooth (I use a hand mixer for this & feeding as well)
Place in preferably warm place but the cooler the more time it will take, even inside a fridge will work eventually aka feeding.
2-4-6 hours, depends on temperature of room
Beware it can and will more than double in size & crawl out of the food box and make a mess.
When it is nice and bubbly move this to a refrigerator, feed at least once a month (weekly for first month or so to get it stabilized)
If you have room in like a spare fridge to do so, otherwise either give away starters or freeze (or toss out if limited room)
If you like your bread towards the light side, feed the starter with white bread flour otherwise feed it with the whole wheat or a mix.
You still must use white bread flour with whatever you may be making or it will be very dense with 100% whole wheat, unless you have an affinity for that style.
