Biography: Anne Morrow Lindbergh is a renowned 20th century aviator and author. She was born in 1906 in Englewood, New Jersey, to a wealthy and influential family. She attended Smith College and graduated with a degree in history in 1928.

Something I am almost embarrassed to admit. I never realized just how much the quality of butter used in baking effects the final product.
I recently bought two boxes of sticks of Danish Creamery premium butter for Sherry to use in her baking. It doesn’t matter if it’s from scratch or a box mix, the final product is noticeably tastier.
No more Land O’ Lakes crap. Only premium small batch butters in this house from now on.
Be careful with that Danish stuff. The owners of that crap are feeding cows with a chemical to stop them farting.
So unless someone in your family has a ‘wind’ problem stuck to Kerry Gold.
But yes nothing beats real butter.

You are SO right. Like everything else, “garbage in, garbage out” also holds true for cooking and baking. I make chicken Marsala and the brand of Marsala wine make a HUGE difference in the taste of the final product
Next time you’re pan searing salmon filets… try half coconut oil and half butter with just a very light pinch of salt. The salmon gets all crispy on the outside and super tender and delicious on the inside.
I’m learning to cook with coconut oil and avocado oils… like them MUCH better and they’re less expensive than EVOO. Aldis has great brands.

Sourdough bread.
About 6 weeks ago I decided to learn how to make sourdough bread. It’s taken a few tries and I’m getting a decent product now.
Making sourdough is a chore. Every Thursday evening I take the starter out of the refrigerator and let it activate overnight. Friday mornings I start the dough making and feeding the next batch of starter, by about noon the dough is ready to rest for a day. I bake it on Saturday in a cast iron dutch oven inside of my kitchen oven, it takes about a half a day to get the baking done.
I usually make 4 loafs. We’ve been giving one or two away, feeding some to the chickens and eating the rest. I have put on about a dozen pounds since starting this learning project. Once spring gets here I’ll write down my recipe and technique and put it away until next fall.
For those that are thinking of making their own sourdough bread………….don’t do it.

Seeing your post brought me humor though – because I have entered the trap of making my own Greek yogurt. Super easy process – but it is a vicious cycle like your sourdough.
A recipe to share with our Treeper pals:
In a heavy dutch oven or deep soup pot, take 1 gallon of Organic whole milk and heat it just to boiling on medium heat stirring with a clean spoon occasionally – heat to 180 degrees. (Must use thermometer for this)
Remove from heat and allow milk to cool down to 110 to 115 degrees with lid off. Takes about a half hour to get it to cool down enough.
While cooling the milk, in a separate bowl, add 1/4 cup of your favorite Greek Yogurt (I used Aldi’s Specially Selected Indulgent Greek Honey Vanilla Yogurt or Greek Gods Honey Vanilla for my starter). Add 1/4 cup honey, 1/2 cup of brown sugar, and 1 tablespoon vanilla extract and stir until sugar is dissolved and yogurt is thinned. (I do this and let it sit to room temperature while my milk is cooling. Don’t let the sugars scare you – read on and you don’t have to add them.)
When the heated milk is cooled to 115 degrees, remove the film off the top, and add the yogurt, honey, brown sugar, and vanilla blend and stir it thoroughly into the warm milk.
Replace the lid on the heavy pot and wrap the whole pot in a large, clean, bath towel, and place it in your oven WITH THE LIGHT LEFT ON overnight or for between 12 to 16 hours. (The longer you leave it the more of tang it has.) Remove from the oven. You can stop now for regular yogurt – but if you want thicker Greek yogurt – keep going.
Take a double boiler pot with a deep strainer in the top and line the strainer with cheese cloth. Pour the yogurt you just made into the cheese cloth. Tightly wring wrap the cheese cloth at the top to squeeze the liquid whey. Drain off the whey drippings (discard or use later for other things) and then just tightly wind the cheese cloth and tuck into the pot and cover with a lid. Wrap this pot back in the large bath towel and return into the oven with the light left on. Check it to drain off the whey once every two hours or so, for about 6 to 8 hours. The longer you leave it, the more whey drains off and the thicker it gets. 8 hours imagine VERY THICK sour cream consistency.
NOTES: If concerned about the sweetness – most of the sugar (natural and added sugar) drains off in the whey, but the yogurt retains a modestly sweet and flavorful flavor. You can opt not to add any sugar, vanilla, or honey. Wait to mix in fruits and such after it sets, but if you use fruits make sure they are frozen and the size of small peas. Frozen seems to hold more flavor – or you can stir in your favorite full fruit jams or preserves, nuts, granola, etc.
You do not have to use fancy milk. The higher the milk fat the greater the quality of the yogurt, but it does not have to be Organic. Use what you have.
Whey can be used for other things – smoothies, fermented drinks, etc. It’s helpful to read up on its health benefits and proceed from there.
If you are going to continue to make your own yogurt remember to retain at least 1/4 cup from your prior batch to use as your starter for the new batch, but make the new batch of yogurt within one week of making the former batch.
As, Rix Six, says… don’t do it. Addictive… and then you start calculating the cost of ingredients verses buying from the store – but at least you know what’s going in there. Man, I wish I had a milk cow or a goat!
Still haven’t tried homemade Mozzarella yet. Needs citric acid, vinegar, lemon juice and salt – or some variation thereof for that. Can’t wait!

Ryan has had to go thru a few surgeries and is in recovery. I’ve learned more about what happened and just how heroic Ryan was. When his girlfriend was shot, Ryan was the one that went down to her to try to stop the bleeding and perform CPR. While he was doing this the shooter shot him 5 times. In the back, legs, arm and face. Ryan got up and wrestled one of the guns away and then emptied it into the shooter. Ryan then went to a neighbors house and had them call the police.
After the police finished their investigation and gave the all clear for the home to be cleaned up, my son, his wife and Ryan’s brother went to the house to to do the cleaning. My son said that you could see Ryan’s bloody hand print next to the door jam where he balanced himself before leaving the house to go to the neighbors.

JWoo, I tried to make mozzarella in the beginning, the problem is the milk you get from the store has pretty much has it removed already from it. A gallon of milk 4bucks??(8 lbs) yeilds less than 1 lb of Mozz tho you can reheat/treat it again and get as I recall ricotta ??? but I was not successful at getting anything.
You must start with raw milk which most states ban you from legally buying (IN being one).
CO it is not banned but also not really available nearest to me is 3 hours each way to get … not worth it.
Someone locally here was willing to sell goat milk when they were not nursing … also not worth, at least for commercial purposes.
If you can acquire raw milk, go for it, I can imagine how tasty it will be, hard for me to get decent cheese off of Shamrock they deleted all Wisconsin cheeses from inventory/stocking about a year into WuFlu, just now added one (WI Mozz) back, had a decent price that they just jacked up a couple of weeks ago so I went back to a non-Shamrock brand they added that has a good flavor & melts/browns properly.

Yes, I’ve been watching one of those pioneer self-sufficiency guru gals… who has her own livestock and speaks of their surplus of milk and FRESH CREAM that made me swoon. Love coffee with cream and no sugar in it. Just watching her sweep the cream made me a little jealous that I’m confined in this stupid “luxury” apartment with no amenities that inspire me… except my two car garage and ample storage… well… and it’s relatively crime free for the meantime. Which is good, because I still feel no better about my office space.
I’m ready… ready to own chickens, cows, goats… but couldn’t butcher any because they would be my PETS. Savannah thinks she could get a good t-bone out of it, but she’s not gazed into the docile eyes of Betsy the cow.
Sorry to hear about the mozzarella shortage… so ridiculous and impossible to make a good pizza pie without it in my humble opinion. And a margherita pie is a personal favorite… but only with Buffalo mozzarella and sundried tomatoes and fresh basil.
As a side note… at Aldi’s tonight we purchased a rather expensive tomato…alas, I threw away the wrapper. They are hwirloom DARK GREEN.. with slight burgundy, about the size of small baseball… and they come 4 to 6 in a long sleeve pack. About $4… but whoa they were si flavorful. Excellent for a Caprese or righteous BLT. Highly recommend.
Yes to property to raise a few … pets. Unfortunatley I hesitated back in 2011/12 when I was offered some cheap property 4 acres of mostly hill but had building site for 4K.
Since the urban flee of the WuFlu era a 1/4 acre building lot is 25K now. My commercial lease is up in 28 so if I cannot find a place to build a little tiny house & build a big garage with some about of acreage to have a few pets I will look elsewhere to perhaps just retire to or convert to food truck that I can take anywhere since 72 is my full retirement age according to the IRS. sigh

Sourdough is pretty much an art, I remember mom having an entire shelf of the fridge dedicated to “Herman” dough starter & she definitely worked on it a lot to get one batch a week & by hand even, no big stand mixer.
I have been doing it commercially since 2011 and pretty much discontinued making it with the WuFlu & Bidenflation as no one was really wanting to spend any extra money for sourdough & I must sell at least 3 times just to pay for the ingredients for a half batch (~9 lbs). By health code I must discard after 7 days even tho it gets tastier after that until the yeast runs outta “food” and dies.
I have just started getting more requests for it since …. um …. November, I’m guessing there might be a connection there.
Sourdough Mom is 6 years old & alive and well in a hibernation mode.
Sourdough is easier to deal with on a bulk/commercial basis, I would not do it on a small scale @ home as you have found it is a bit … needy of your time.
Best bet is to see if anyone around your town is making sourdough that they might sell it to you on a per lb basis … buy … portion to your specifications and freeze, thaw frozen dough in fridge overnight then set out @ room temp and allow to rise/double in size, punch down & use.
Alternatively if you really wish to get into it & perhaps give/
sell/tipped to friends and neighbors, you can get a commercial 20qt mixer for 1,050, buying a 5qt Kitchenaid (450) will not really get the job done. I started with a 25 qt that I still use & must do multiple batches and until it breaks down anyway, then I will buy a bigger one. (about 5k)Local grocer has “fresh” dough (not sourdough) in stock here on the shelf & is 3 bucks a pound which is a price I match when someone inquires to purchase.

I have looked into it, takes 1k subscribers to be able to monetize your channel which to me seems like a rather large mountain to climb but I see channels that are just about useless have more that that …. sigh … I should end my ranting now. LOL

WE ARE FIGHTING A SPIRITUAL WAR OF GOOD VERSUS EVIL
PRAYING ON THE ARMOR OF GOD
Father God, I now follow your command to put on the full armor of God, because my battle is not against flesh and blood but against rulers, authorities, the powers of this dark world and against spiritual forces of evil in the unseen world.
I first pray on the Belt of Truth that it may be buckled around my waist, may I be centered and encircled by your truth dear Lord. Hem me inside all that is true and right, and may I be protected and held up by the truth of your living word, in my Lord Jesus name.
I pray on the Breastplate of righteousness, please protect my vital organs and my inner man, cover my integrity, my spirit, and my soul. Guard my heart for it is the wellspring of life, please strengthen and guard the most vulnerable places in my life with that which is right, good, and noble that I might not receive a fatal blow from the enemy, in my Lord Jesus name.
I pray on the Gospel Shoes of Peace. I choose to stand in the shoes of your good news, and on the firm foundation of my Lord and Savior Jesus Christ, the solid eternal rock. All other ground is sinking sand, I pray that I will not slip or fall, but that my feet would be firmly fitted on your lordship, my Lord Jesus. I choose to stand on you, so that the peace of God, which transcends all understanding will guard my heart and mind in Christ Jesus, the eternal Rock of Ages. I receive your holy peace now my Lord, from the sole of my feet to the crown of my head, in my Lord Jesus name.
I pray the Shield of Faith into my hand now. As I take up the shield of faith, I ask that you might extinguish every dart and arrow that is launched from the enemy to take me down spiritually, physically, mentally, emotionally, and every attempt of the enemy to destroy my joy. I ask that my faith in you would make it flame out. Extinguish every flaming arrow that would come against me, my life, my family, my home, or my ministry. May my faith always be out in front of me like a shield. Give me the courage to “faith my fears” by choosing to walk by faith and not by sight, in my Lord Jesus name.
I pray on the Helmet of Salvation, that you might protect my mind from the thoughts that can lead me astray. I choose to take every thought captive, and arrest all intentioned ideas and motives that would harm others, or distract me from your holy will for me. I submit every captured thought to the Lordship of my Lord Jesus Christ, and ask that you would imprison those thoughts that are not of you my Lord. Transform my mind and renew my thinking that I may think God thoughts, and have a sober mind that is focused on your glory. Please protect me from being double minded that I may allow my mind, I reject to live an earthly life, because I choose to live a holy one, governed by you My Lord Jesus, the prince of peace, please have my mind to be saturated with the holy mind of Christ, in my Lord Jesus name.
Finally, I take up the Sword of the Spirit which is the holy word of God, I pray this powerful offensive weapon into my hand, and ask that your holy word would be fitting for every encounter I face. As the enemy gets close to me, please give me the insight, wisdom, and skill to wield the word of God to drive away the enemy, in my Lord Jesus name.
May the enemy and his team flee from me, upon hearing the word of God spoken by the power and direction of the Holy Spirit. Give me the sword of the spirit to cut through the wiles of the devil, so that I may discern the schemes of the enemy when he is near.
With all kinds of prayers, supplication, and intercession I pray to you my Lord God as the one who fights my battles. Now that I’m in your holy powerful armor, I walk away covered and ready to face my day as you go before me, and please protect me in the midst of the spiritual warfare in this unseen world, in my Lord Jesus name.
Thank you my Lord, for the spiritual weapons of armor and prayer that you have given me. It is written no weapon formed against me shall prosper, and you will refute every tongue that accuses me.

The Mennonite Disaster Service has confirmed that a group of Amish crews from Ohio installed a MIND-BLOWING 150 temporary bridges and culverts in Western North Carolina. These bridges were a lifeline to those who lost access to their homes. God bless the Amish!!!!
