I am here comforting my 6 year old because we missed the snow at Christmas. We were up at my parents in NW Arkansas and missed the snow by a few miles. It did snow however in Memphis. We left my parents on Friday and just as we were leaving, it started spitting snow. They ended up with a very nice dusting.
I am sitting here ready to spit nails at the imbeciles in D.C. I have had it with them. What a bunch of lily-livered cowards. I’ve had it with the low-information voters who are more interested in which star is having whose baby than the future of their kids and grandkids.
I’m scared to death of what HellCare is going to bring for my family ~especially my dd who had a kidney transplant last year~.
I’m mad, but I’m not giving up the fight.

I already said… 2013 slightly yellower than 2012… otherwise the same.

The most I ever had was 7 cats.. that was goof.. but down to 3 now. I would get more, but…
I like Black cats… as a very small child I remember first cat “Tosca” a black cat… then the first cat I got with my wife and family was a black cat. Currently one of our 3 is a black female.. “Gwyneth” nicknamed LBC (little black cat)

So far, I have started the new year by baking muffins with my girls, and then making these for myself:
(Low-carb, quesadilla ham-egg cups)
I have one more dish to prep, and then all of the football-watching food will be ready to go.

Don’t forget the recipe – eggs are one of my favorite foods.
I’ll do my best; this was an adaptation of a different recipe, and I pretty much just winged it.
Here is the original recipe. I found the use of canned salsa and cheddar to be way too acidic. I’ve got a recipe for homemade quesadillas that involves sauted bell peppers, onions, mushrooms, and roasted poblanos, and authentic Mexican cheese; I thought it would make for a good adaptation to the recipe. So that’s what I tried today.
Preheat oven to 375 degF
Ingredients:
12 slices of deli ham (I used black forest; regardless, make sure it is sliced thick enough to hold the weight. I had it sliced at a setting of 17.)
12 large eggs
2 cups authentic Mexican cheese (queso quesadilla, asadero, monterrey jack blend)
1 poblano chile, roasted* and diced finely
1/2 onion, diced
1 bell pepper, diced
1/2 cup mushrooms, chopped
Salt
Pepper
Garlic powder
Cumin
Oregano
(Other than 12 eggs and 12 ham slices, all other measurements are approximate.)
Prepare vegetables:
Saute onion, then add and saute bell pepper, then add and saute mushroom. Add diced, roasted poblano*, and season to taste with salt, pepper, garlic powder (or fresh, crushed garlic), ground cumin, and oregano. Remove from heat.
Prepare ham cups:
Liberally coat a 12-cup muffin tin with non-stick cooking spray. Trim ham slices so that they fit in the muffin cups (a little excess is fine), and then place one slice in each cup.
Assemble:
Place a layer of cheese in the ham cup, followed by about 1 tsp of sauted vegetables. Crack one egg into each cup, then top with another ~1 tsp of sauted vegetables, and a liberal topping of cheese.
Bake at 375 until eggs are set, approximately 20 minutes.
Remove cups from the muffin pan and serve immediately with fork/knife, or let cool slightly and serve as finger food.
Other notes:
I’ve found that 20 minutes yields a perfectly over-hard egg yolk. With some experimenting with time, you could probably get an over-medium yolk, though if you did, I would recommend eating them immediately.
This recipe has a fair bit of prep work, but it is worth the effort (especially for the roasted poblano).
If I were making this for a crowd, I would prep the entire thing the night before, and refrigerate overnight, Then pop straight into the pre-heated oven in the morning.
* Roasted poblanos are incredibly easy, and are my secret ingredient for making anything taste more authentically Mexican. If you have a gas range, just place the poblano on top of the grate, right on an open, high flame. Once the skin begins to blacken and blister, rotate. Once the entire chile is blackened and blistered, remove from the flame, place immediately into a zip-top bag, and seal. The chile will steam in the bag, softening the skin.
After 5-10 minutes, remove from the bag, and wipe the skin off of the chile with a paper towel. Then butterfly the chile by running a knife along two sides, and open. Cut out the stem and seeds, and discard. scrape out any excess seeds, and trim any ribs. Then dice.

After a reflecive mood, staring into a blazing fire (and keeping my ditzy daughter from maiming herself by lighting firecrackers in same fire), my 2013 resolution is….

After spending the wee hours setting-off fireworks of the legal and illegal styles, imbibing enough to almost forget the clown-car crew we have in DC and firing-off my non-Feinstein friendly weapon into my embankment (we can do that out here in the sinister sticks) to entertain the great grandson we decided to turn in and get a good night’s rest so that we could awaken refreshed and ready to deal with the same garbage that’s been smelling up our front step since January 20, 2009. Let’s pray we still have a country left on January 1, 2014.

Happy New year ! Running a little late ……was gonna stay up just until 12 but ended back up at 4am with sick teenager poor thing……. When a 16 year old boy wonts his mom he really doesn’t feel good. So my first day of year running around a little sleepy but cooked up a storm. Got my big baby wraped up and pampering him .Hubby has his tummy full and life is good. One of the best things I ever did was find this place. You guys are the best……
