Thanks for checking in. Still interviewing, although things slow down for the year. I am on Swiss unemployment, which is enough for thrifty me to pay the mortgage, insurance, groceries, utilities, gas, medical insurance, etc. Lots of irons in the fire; not are getting hot, and I will have revisit all of this in mid-January when business decision-makers are back from extended Christmas breaks.
My prayers are with you, Mike. I believe the upcoming year will hold good things for you!

Reminded me of a hospital in my area. Every time a baby is born there, bells ring throughout the hospital. There are plaques placed throughout the hospital explaining why the bells ring.

I was thinkin today about making a batch of divinity. Years ago I found a never-fail recipe (yep it comes out perfect even if it’s pouring rain outside) that is cooked in the microwave.

Note: Make *sure* you use *only* a GLASS bowl. First Christmas DH and I were together I made it using a crockery type bowl. Halfway through it overheated the microwave (blew it up) and I had to finish it on the stove top. Didn’t turn out as well.
At Christmas I use a few drops of red, green and blue food coloring in different batches.
Never Fail Divinity (microwave)
4 c. sugar
1 c. light corn syrup
3/4 c. water
Dash of salt
3 egg whites
1 tsp. vanilla extract
1/2 c. chopped pecans (optional)
Instructions
Combine sugar, corn syrup, water and salt in a 2-quart glass casserole. Microwave on HIGH for 19 minutes, stirring every 5 minutes or to 260 degrees on candy thermometer. Beat egg whites until very stiff. Pour hot syrup gradually over the egg whites, beating at high speed for about 12 minutes or until thick and candy begins to lose gloss. Fold in vanilla and nuts. Drop by spoonfuls onto waxed paper.
LOL, one year I made this for the office and the guys went bonkers over it. When it got down to three or four pieces left, one of the quietest guys (which made it more funny) walked over to the dish, picked up each piece and LICKED it. He then grinned, walked away and said….ooooookay, now I can be sure there’ll be some left when I get back into the office this evening! QQ
Here’s another favorite for the South re Christmas candy. I’ve tried the bourbon “twist” listed at the bottom. wunnerful!
FTR, down here South of the Mason Dixon we pronounce it “prah line”, not “pray line”.
And we put “puh kahns” in it, not “pee cans”.
Ingredients
2 cups pecan halves and pieces
3 cups firmly packed light brown sugar
1 cup whipping cream
1/4 cup butter
2 tablespoons light corn syrup
1 teaspoon vanilla extract
Wax paper
Preparation
1. Preheat oven to 350°. Bake pecans in a single layer in a shallow pan 8 to 10 minutes or until toasted and fragrant, stirring halfway through. Cool completely (about 15 minutes).
2. Meanwhile, bring brown sugar and next 3 ingredients to a boil in a heavy Dutch oven over medium heat, stirring constantly. Boil, stirring occasionally, 6 to 8 minutes or until a candy thermometer registers 236° (soft ball stage). Remove sugar mixture from heat.
3. Let sugar mixture stand until candy thermometer reaches 150° (20 to 25 minutes). Stir in vanilla and pecans using a wooden spoon; stir constantly 1 to 2 minutes or just until mixture begins to lose its gloss. Quickly drop by heaping tablespoonfuls onto wax paper; let stand until firm (10 to 15 minutes).
TRY THESE TWISTS!
Chocolate-Pecan Pralines: Prepare as directed through Step 2. Add 2 (1-oz.) unsweetened chocolate baking squares to sugar mixture. (Do not stir.) Proceed as directed in Step 3.
Café au Lait Pecan Pralines: Add 2 Tbsp. instant coffee granules with brown sugar in Step 2.
Bourbon-Pecan Pralines: Add 1/4 cup bourbon with brown sugar in Step 2.
